Special son weekend

Kyle and I got some two-on-one time with our big boy this past weekend and it was so so special. Meanwhile, my parents had Valley for their own special time.

We took the opportunity to do a bunch of his favorite things (reading books, playing pokemon, hot tubbing, crafts, and throwing the football), while also getting in some one-on-one time for each of us.

He also picked out all the meals for the weekend, so of course we had bacon for breakfast and steak for dinner. The kid knows what he likes.

Here’s my delightful farro and kale bowl. If you’ve been living under a rock, it’s the same one I make (and show) practically every other post.

Per usual, it had two kinds of nuts (candied walnuts and pecans), sheep cheese, dried cranberries, and a lemon miso dressing. And kale and farro, naturally.

I made enough for two meals, so be prepared to see it again below. 🙂

As I mentioned already, P wanted steak for dinner, so Kyle grilled us all filet mignon.

How fancy are we!?!

We had it with cornbread and a poppyseed dressing broccoli slaw.

It was such a great evening. And then we all snuggled up to watch a movie together (or part of a movie at least…).

Oh and we had chocolate too, duh.

I keep trying to like Lily’s bars (how could I NOT buy gingerbread flavored chocolate!?!) but they just aren’t it. Luckily, my sweet stash is still bursting at the seams.

Oatmeal! It has been a minute hasn’t it! This bowl had red walnuts and vanilla in it.

And here’s bowl number two of the aforementioned salad.

It’s always better the second day because soggy kale is just heavenly don’t you think?

Pacman’s dinner choice this time was chicken, slaw, and roasted potatoes.

I’m going to make an effort to use my silpat more in lieu of foil so as to reduce my waste. I have gotten lazy over the past few months because LIFE (sigh…) but excuses aside, I really should do more ESPECIALLY now that my plastic use has gone back up [on account of covid safety measures prohibiting shopping with my own bags, buying from bulk, etc].

Thank you to the reader who brought my attention to this. I needed the reminder to do better.

Everyone agreed this was an exceptional slaw, which I’m attributing to the Sir Kensington’s special sauce I added.

Sorry about the dimly lit pics, but this time of year doesn’t really help much with that.

Kyle drove to my parents’ house the next morning to pick up V. I sure did miss my baby girl!

    Silplats have never worked for me. I went back to foil after many attempts to use silplats. Maybe I will learn some tricks to using silplats from you. You are a mom doing a million things at this time, using foil is not something you should feel guilty about. You are doing a great job. Keep breathing and eating chocolate.

    Hi Elise,

    Been following your blog on and off since your days in NYC!! Just wanted to mention that I use by Pyrex large rectangle bakeware to roast veggies. Clean up is easy, especially since the last time I cooked sweet potatoes that leaked, I just sprayed some Dawn Platinum on it, let it sit for probably a half hour while I did something else, rinsed and just a bit of scrubbing the last bits off with a scrubbing sponge and it was like new. I hate using foil and only use it when I have to use it to cover something. Anyway, just wanted to pass that along. I don’t have a silpat. I’m still leery of using any of the silpat type of oven things like muffin pans, etc.

    hi elaine! i use pyrex sometimes too…lately we just need so many more than will fit in it! do you ever find it steams more that way though? the higher sides tend to do that for me…or maybe i just have too many veggies in them?
