Solo Saturday

Initially, I thought this weekend wouldn’t be too bad since my weekend at the hospital overlapped with Kyle’s trip to the west coast (I mean, we might as well both be occupied if we aren’t together, right?)…but then I found out some of my fave peeps were going to be in town.  [Insert HUGE sigh]  Next time…

Work grub.  Let’s get to it.

Now what do we have here:  PB&J Larabar (it had been too long – I don’t recommend waiting over a month week between consuming this flavor), Chocolate Brownie Clif bar (ummm, chocolate – enough said), dried papayas, dried pears, apple, and ENSALADA grande.

Fancy lettuce, shredded carrots, sweet potatoes, chickpeas, and ray-rees (did I ever mention to the blog world that this was my baby word for raisins?).  What were some of your baby words?  Did any ever stick?  I still refer to raisins as ray-rees and apple juice as adido (pronounced AH-dee-doh).  I’m a special one, huh?

Anyways.  The most AMAZING thing happened at work today.  I had three patients and I discharged EVERY SINGLE ONE.  The bad news: I couldn’t take my lunch break til 3:30 pm (hungry much?).  The good great news: I had zero patients by 4 PM!!!!  I took my lunch break, came back at 5 and helped some of the other nurses for a bit and then called the ICU to ask if they needed me.  Nope.  I was off of work by 5:45 pm!!!!!!  This really proves that ANYTHING can happen.  I mean, seriously, this is (and will be forever more) a once in a lifetime thing. 

I took advantage, of course, and texted my Home (gossip) Girl while dilly-dallying my way home.  I spent half an hour in Union Square hoping to run into Brooke or Kailey, but no luck 🙁

I got home tired and starving, but was overjoyed to look at the clock and see that it wasn’t even 7 yet.  Wow.  The idea of having the TIME to cook dinner on a WORK NIGHT was so foreign, I jumped at the opportunity. 

I have been pondering potential soup recipes for some time, so it was experiment time.

Step 1: Steam the bejeezus out of a sh!t ton of carrots

Step 2: Add to the magic bullet along with “milk” of your choice (I went with plain soymilk)

Step 3: Add salt, peppa, a dollop of miso paste, a dash of ginger, and blend, blend, blend away

**warning** A little ginger goes a LONG way…

Simple ingredients, no?  It was perfect.  For my MAIN dish, I wanted to try something new.

This isn’t just any ordinary brown rice…no sir, this is organic sweet brown rice.  Ever heard of it?  Well (apparently) it is also referred to as "waxy rice," "glutinous rice," or "mochi" and can be used for sticky sweets, snacks and desserts (or sushi).  I wasn’t to sure about what to do with it, but for some reason the idea of a sweet and sticky rice appealed to me in the moment.

As you can see, it was VERY sticky.  So here’s what I did with it.

While this bowl was yummy, for my second helping, I decided to just DO the damn thang…(aka carb up pump up the effing soup).

May I present to you: CARROT GINGER SWEET RICE SOUP.

    I love mochi! Except it looks a lot different than the brown rice you made…I’m not sure how the mochi candy is made but it’s delicious. I would love to try that brown rice! Where did you find it?

    Getting out of work early is always a nice bonus — especially if you didn’t know about it! I’d probably do the same thing (decide to cook when I normally wouldn’t have a chance)… that soup looks awesome, it’s perfect weather for it!

    I love ginger anything so that soup sounds great!

    One of my baby words was “suvvy” – it means anything soft and fuzzy. Bathrobes, blankets, sweats…all suvvy. My parents and I still use it. Oh and ballerinas were “dallerinas”.

    No baby words, but I am still learning how to pronounce words I’ve read for years- I only learned how to pronounce “edemame” yesterday. Still no clue with seitan or tempeh…nobody says them out loud in my company.

    Chocolate brownie Clif = awesome. Especially with peanut butter.

    I looooove using soup as a sauce for pasta/rice- that rice looks awesome! I am such a sucker for cool grains- have you tried wheatberries yet? Are you working tomorrow? A few of us are going to Wild Ginger for lunch…

    Ray-rees…that is so cute.
    That rice sounds so good! I can’t believe I’ve never had it. It is basically like sushi rice?

    Yeah. Its basically brown sushi rice. Its sweetish so its almost like oatmeal. Add some ray-rees and its breakfast!

    Kunga was one of my baby words – it stood for anything gross. My cousin had a great one. He insisted the singluar version of pantyhose was pantyhoe. I don’t know why you’d have just one leg of pantyhose but it stuck. Now if you have kunga on your pantyhoe, you’ve got some issues.
