Happy MLK Jr. day! Even though we don’t get holidays in the hospital, I actually have today off, so I can appreciate the holiday like everyone else (meaning Kyle)! I slept in and enjoyed a huge froth-filled latte while watching the View.
Kyle’s not a huge fan of the View, so he was working on the computer to block out “Whoopi’s obnoxious voice.”
I made myself a little somethin’ somethin’ for brunch – an open-faced PB quesadilla with a WW tortilla and peanut butter. I’ve never had this brand of tortilla, in fact our grocery store rarely seems to have any tortillas in stock, so I usually buy whatever they have. Anyways, I really liked these. They were on the thin side (which I like) and had distinct grains in them, which gave texture to each bite. I like thinner tortillas because then they can function better as wraps, too. To be honest, I don’t really like the white thick doughy kind – they tend to overpower whatever their contents are.
Either way, peanut butter makes everything good. I sprinkled some cinnamon on top and savored every bite.
In honor of K’s post, I decided to have a Berries GoMega odwalla bar crumbled up in vanilla o’soy before heading to the gym. This flavor is one of the more fruity ones, so I think the Super Food or Super Protein flavors would be better since they are more granola/oatmeal like. Still – it def hit the spot and gave me energy for a good gym sesh.
The gym was packed (again) and 800 degrees (again). It’s very hard to work out when you are sweating before you even start and the lines for machine access limit you to 30 minutes. I’m a rule observing gym rat, though, so I started off with 30 minutes on the elliptical, then moved on to run for 30 minutes on the tread mill. I once again put off arms and abs for tomorrow (lazy).
I wasn’t too hungry after I got home from the gym, but I knew I was heading out for a bunch of errands so I made myself a plate with carrots, celery, home made hummus, and a GN veggie burger. Talk about a platter full of favorites!
I’m glad I had this, since we ended up seeing Gran Torino (which was AWESOME btw) and didn’t get back home until 9 pm. I don’t really like eating so late, so I just had a little night time snack (sorta).
This is the first time I tried tempeh that wasn’t already prepared (yeah, when it comes to alternative non-meat proteins I’m a WF hot bar junkie). I love LightLife products so I figured that was the safest place to start. I cut off a few slices and ate them plain, which tasted the way I expected it would…so I ended up dipping it in hummus (that’s my solution to just about everything). I need suggestions on how to prepare them! Also, what’s the difference between the soy flavor (that I got) and the others (I think I saw flax and veggie)? Looks like I need to do a bit of research before my next go.
Anyways, here’s my dinner plate, with vegan sushi (I’ve blogged about this roll in the past) and the tempeh slices.
Well, since the hummus was already out…I had some more carrot and celery sticks 🙂
I seriously have been having mini-meals all day long. I’m usually more of a “meal” girl, but today was so scattered, I feel like I just ate snacks all day long. Anyways, time to enjoy a wonderful night of crappy t.v.

you know i love tempeh plain…but the BEST i’ve ever had it was WF hot bar…so AGREED there. I have been lazy and haven’t made very many recipes with it….but I’m excited to see what you do!
