Monday morning was long. Flying with a child with allergies is always stressful, even though we are sailing through OIT. Since we had to leave before the sun was up to get to the airport, I had to figure out a way to give P breakfast and his dose while on the plane. And bringing milk through security isn’t exactly a breeze. Long story short, he had a minor reaction on the plane – likely due to not eating enough for breakfast beforehand but who really knows – so Kyle and I were on high alert. Not to mention, V is barely potty trained. More stress. Parent life, ya know? He’s also in the middle of a cold. It’s a minor cold, but for him, anything that makes him immunocompromised exacerbates his already taxed immune system. Little buddy was sneezing every four seconds. And I’m not exaggerating. Kyle and I take turns freaking out, so that we are never freaking out at the same time. At least one adult has to be calm!
We finally got back to Davis and kept P home from school to get extra rest. Showers and baths for all! Kyle had to pack up again right away because he was leaving later that day for a work trip. 🙁 I took the hours he was home to get life squared away – two grocery trips, two loads of laundry, and checking lots of random things off my to do list. Adulting. I tell ya. My phone reminder has been alerting me to prune and spray the nectarine tree for a month and I keep pushing it off. And our car’s outside is so gross! Now it finally looks silver again 😉 and the windows are sparkling.
Glad I had some food already prepped.
I added sriracha to the home-made ranch dressing to give it a kick. I’m amazed by how authentic this ranch tastes considering I made it myself with pantry staples that didn’t involve buttermilk. Kinda cool.
I actually snuck in a run too (!!) before eating this chopped salad, which had romaine, cucumber, celery, yellow tomatoes, fried chicken, avocado, and sriracha ranch dressing.
With plantain chips too.
And way more than shown because I’m a human, not a bird.
And because of the time change and my extraordinarily productive afternoon, I was starving by 4 pm, so as soon as Kyle left we just ate dinner. At 5. Whatever.
I had pulled leftover ribs from the freezer right when we got home and they were ready just in time. A friend made them for us last week but I froze them because we had too much fresh food to eat before leaving town. I couldn’t wait to dig into them though, and it was soooo awesome to have a home made dinner on that first day back in town. The ribs were crazy good and the meat basically fell off the bone and since she’s an instant pot lover (and I know that’s how she made them), it made me realllllly consider one. Guys, I have been putting off the insta-pot for so long because DO I REALLY NEED another kitchen appliance?!?! No. I have everything. And we have no more room for anything else. I need to be strong. Please, no comments about how an instant cooker will change my life. Please. Please? Hypothetically, what size should I get?
Since dinner was so early, I had time for this after. It’s pretty rare that I feel like a night time treat that isn’t chocolate, but oddly enough that day arrived. I had a scoop of this (found at Costco of all places!!) and a few scoops of salted caramel gelato (insanity) that Beverly bought me when she was here. Holy moly. I could try to put into words what salted caramel gelato tastes like, but it wouldn’t do it justice. Just. Wow. I think I went to sugar heaven. New Barn failed me with their almond milk (I tried two different kinds but it’s not worth the $$$)> The almond creme was definitely way better, but still not something I’d buy again. At least it was affordable though. Win for Costco.
I spent the rest of the night watching football with P (he napped so he got to stay up a little later) and then doing some prep in the kitchen.
Too soon??
Now let’s hope some heavy meds can nix this cold in the bud because I have a long stretch of time as a solo parent and I’m feeling pretty good and set up for now. Healthy kids makes everything a LOT easier though. At least Valley is walking decently on her own now though. So many ups and downs!!!
Great meal prep ideas. I admire all you get done to prep for solo parenting time to avoid serving your kids hummus plates (like I do!) every night for dinner. love your posts!

Just wanted to say I tried Gobble and loved it. Everyone in our house has been stressed this week, and the Gobble meals added some much-needed fun and yumminess.
I think we’re going to keep getting Gobble for a while. It actually helped my picky-eater daughter try new foods she wouldn’t try otherwise. And I have no energy/interest to look for recipes or grocery shop lately.
