Seitan in the instant pot

I’ve been working up the nerve to make this.

Instant Seitan (aka vegan wheat meat)

Ingredients:

  • 1 1/2 cups vital wheat gluten
  • 1/4 cup nutritional yeast
  • 1/2 teaspoon of thyme
  • 1/2 teaspoon oregano
  • 1/2 tsp salt
  • 1 cup vegetable broth (may need a bit more)
  • 2 tbsp tamari
  • 2 tsp liquid smoke
  • 1 tsp toasted sesame oil
  • 1 tsp Annie’s vegan Worcestershire sauce
  • 1 cup broth (for bottom of instant pot)

Directions:

Combine liquids in a large bowl, then add the vital wheat gluten, nutritional yeast and dried herbs.

Mix together (kneading) until dough ball forms.

Wrap with a cheesecloth and place in the instant pot with the broth.

Cook on high pressure for 30 minutes.

Here it is all wrapped up in cheesecloth. It will be hot to handle getting out of the IP so just wait until it has cooled enough and then unwrap it.

Easy peasy wheat meat ready for the carving!

Slice for sandwiches or cube for stir fries…or use however you would any other meaty protein.

I kept the seasonings mild enough that this could be adapted for any recipe…so it could go Italian in a marinara sauce or Argentinian topped with chimichurri sauce…really whatever you want! Plenty of places to search for more ideas here.

    I purchased an IP last fall after being amazed by all the wonderful food you have cooked in it. This is the first time I have seen a seitan recipe for the IP. Thanks for always sharing your creative food ideas and inspiring me to cook.
