Seasonal breakfasts

We have been changing up the breakfast game more than usual lately because the kids are kinda getting sick of all the usual suspects.

Parfait bowls are a good all-in-one option for me to make in advance because I can bury his dairy dose (yogurt) in yummy toppings, store it in the fridge overnight, and then it’s ready to go in the morning as soon as they are.

I love any breakfast that includes his dairy (the only other way I’ve figured out to do it is cereal w milk).

To stay desensitized, he has to have 4 g milk protein every 12 hours (we do twice a day dosing but are less rigid with the exact times now that he is in maintenance and tolerates triple the amount of protein).

Any other ideas you guys have? FYI, it can’t be baked (ie dairy in a muffin doesn’t count).

This bowl had their favorite fruit of the season, pomegranates, as well as granola, sunflower seeds, pepitas, and bananas.

Another day I made them “apple cobbler”, which was basically oatmeal with a much different ratio of toppings to oats.

We had just been apple picking, so we had apples in excess, and they were allll about trying the different varieties. I used four different ones in this bowl, simmered in a scant amount of water with cinnamon and sugar, until they were softened. Then I added 1/4 cup instant oats and a few more tbsp of water and brown sugar.

A few minutes later they enjoyed this bowl of warm apple spiced goodness.

We had leftovers so the next day I served it with peanut butter for his peanut dose. Unlike dairy, peanuts are only a once a day dose. We used to do them both in the morning before school, but now that he is home all day I switched it to snack time. He likes that a lot better, even though it means his snacks are super repetitive. Peanut butter and x, peanuts with y, peanut butter and z. You get the idea…

His fave combo is peanut butter on apple slices, which is why I knew the peanut butter and “apple cobbler” combo would be a big hit.

Last but not least, pumpkin bread!

I had to wait until after Halloween to use one of the sugar pie pumpkins from the porch.

I removed the stem and then cooked it whole in the instant pot for 30 minutes. It was SO easy to peel away the skin after and scoop out the seeds.

Then I just pureed the flesh with an immersion blender (it made more than I needed so I froze a jar for later).

Topped with chocolate chippies!

What a beauty!

I made this loaf while watching Kamala and Joe speak for the first time as President and VP elect and it was just about the best night of my life.

Celebration baking is exponentially better than therapy baking (which is what most of 2020 has been so far).

It lasted TWO DAYS. TWO. DAYS.

They had it for back to back breakfasts and now they want me to bake up the same bread with every pumpkin on our porch. [Which I may just do!]

    If cheese is warmed, does it still work? I love a slice of toasted bread and cheese. Or an egg and veggie scramble with cheese, omelettes, fried potatoes with cheese…. Really just about any savory breakfast is good when topped with cheese.

    For sweet breakfasts I’m a fan of plain greek yogurt. I usually add a small bowl to my meal when I’m eating quick bread or pancakes or waffles for some protein anyway. Maybe it would be more kid friendly if you mixed in some jam or maple syrup or cinnamon and served it as a dip for fruit or french toast sticks.

    im not sure about “warmed” – that’s kinda a gray area. apparently the protein in milk/cheese denatures and changes slightly when cooked and so it doesn’t count for dosing. i have always avoided counting melted stuff as a result (ie pizza)…otherwise those are all good ideas. Maybe I should seek clarification on how warmed up cheese has to be.

    Also some potential ideas in here: overnight oats? ricotta toast (or cream cheese?) Would he have yogurt // milk in a smoothie?

    Overnight oats are worth a try! I have to check the protein content in ricotta to see how much it would take but I like that idea too! I dont think theres enough protein in cream cheese – he would have to eat a huge amount. Thanks for all the ideas! I’m going to noodle on them and give a few a try!!!

    Okay, my fave is pumpkin oats in the Instant Pot (steel cut oats + pumpkin puree + frozen banana + medjools) topped with a little melted coconut cream and something crunchy.

    And I totally love mixing Hershey’s special dark cocoa powder with steel cut oats in the Instant Pot – something about the pressure just melds the chocolate with the oats and it ends up like dark chocolate pudding. Also amazing topped with melted coconut cream or just regular cream.

    Does P. like cottage cheese? It’s so good with fruit, and the saltiness is a nice change of pace from sweeter dairy like yogurt.

    How about a sort of panna cotta. Dissolve gelatin in some water then add to milk with your choice of sweeteners and let it set up. Kinda of like milk jello. Google the gelatin to liquid ratio. I’ve made this even with chocolate almond milk for something different. Good luck!

    He doesn’t like cottage cheese. But I am DEF trying cocoa powder with oats in the instant pot now!

    Thanks! I may try it. He’s not super into the texture of yogurt, so that’s the main reason a parfait works (lots of fruit and seeds and textural things to hide it) so I’m not sure he’d love panna cotta but it’s worth a try!

    That pumpkin bread looks so delicious!!! For P’s dairy; maybe a glass of some kind of flavoured milk (hot chocolate or something else) + whatever you/he feels like (muffin, toast, etc)?

    flavored milks are a good idea. we have done chocolate, but i never thought about other flavors!
