School is in session

School started (for P)!  It feels good.

We went to Art Beast (his favorite place) on our last day of summer and really soaked up the time as a trio.

Mr. P also had a special one on one day with Kyle over the weekend (because he and I had ours a few weeks ago).  V and I had a tea party, went swimming, and got ice cream together while the boys did their thing.  🙂

And decorated the wall paper for her cubby so that when her school starts next week she will feel all settled as well.

And every time I get a little nostalgic about the time racing by, I just remind myself that they will still be with me more than away from me, so I should embrace the moments of time to myself when I get them this coming year.

His cd player broke so rather than listen to books on cd during his quiet time this week, we have been doing some numbers workbooks (totally me being a tiger mom but by some miracle he thinks of them as sticker games).

And a sushi date with my number one on our EIGHT year anniversary. <3

We went to Huku for sushi while a friend watched our kiddos (P and his buddy played checkers for the entire hour we were gone so I think it was a pretty easy gig).

I’ve now decided with certainty that Huku is the best sushi in Davis.  I feel bad saying that because Mermaid sushi is really really good, but they don’t actually have a restaurant so they are limited in what they can do (they operate out of the co-op).

I was feeling kinda blah one night and wanted something mellow for my gut.  I had leftover tomato soup but only enough for me, so I made a huge batch of chili for the rest of the fam.  Bonus (!) – I made enough for Kyle’s lunches that week AND to freeze for later.

I started with dried black beans, which I made in the instant pot with sautéed shallots, olive oil, a bay leaf, and home-made stock.

Once the beans were done I added quinoa, a large can of diced tomatoes, and ground beef that I browned in a skillet first.

Aside from that, it was just salt, pepper, chili powder, and a glug of red wine…cooked again in the instant pot lickety split.

And it was met with rave reviews!  Every one wanted multiple servings 🙂 Next time I’ll write down the exact amounts but for the most part you can make do with the vague instructions.
