In case you happen to have a bunch of leftover turkey this holiday season, I have a nice Mediterranean dish that you may want to try.
Aside from the turkey, it’s mainly made from staples you’re likely to have on hand, or at the very least use commonly.
Lemon Dressing
- 1/2 cup olive oil
- 1/2 tsp minced garlic (or sub 1 tsp garlic infused evoo)
- 2 lemons, juiced and zested
- 1/2 tsp dried oregano
- salt and pepper
Mediterranean Rice with Turkey
Ingredients:
- 2 cups brown rice (cooked with ~4 cups water and a pinch of salt until tender)
- 1 1/2 cup leftover turkey, chopped (a mix of breast and thigh meat is ideal)
- 1/4 cup fresh parsley, chopped
- 1/4 cup roasted sunflower seeds
- [optional] 6-8 oz feta, crumbled
- 1 batch lemon dressing (above)
Cook the rice and once it has cooled slightly, toss with the dressing. Add the chopped turkey and parsley and mix, then top with sunflower seeds and feta and serve.
The lemon zest was the star of this dish. Mmmm, the zippy flavor is yums! And with the salty feta and crunchy seeds, it’s a darn good meal with so few ingredients. Give it a try!
