I’m sitting across the table from my kiddos, who are playing with play doh. They are on hour number two at this point, so getting my computer out to try to do something is practically begging to jinx them out of their occupied state. Nonetheless, I’m going to give blogging a go.

I have SO MANY THOUGHTS on how this past couple of months have unfolded, but there’s not enough space on the internet for my rambling so I won’t even bother trying. That’s not actually true – but more eloquent people have already said all that there is to say on the matter so I’ll leave it alone.
My kids aren’t going back to school. Yours either? Cool. Let’s all have a good cry and then suck it up and figure it out together.
I’m pretty sad about the reality of 2020. Who isn’t right? Like, can we PLEASE get Breonna Taylor’s case to the forefront of the nation’s agenda? Then we can work on covid. The former seems much more manageable, and yet here we are…still waiting…
Ok, so here’s a meal we ate last month. I had to just rip the proverbial band-aid off and post about something (anything) because otherwise I may never find my groove again. I really don’t have any extra time for blogging, but maybe just maybe I could squeeze in a sentence with like 3-4 photos just to say hi?! It feels good to check in.
This feels very “fall” no? Probably because of the roasted butternut squash. Who roasts squash when it’s 100+ degrees outside?!
Full disclosure, it was still only (ha!) hitting the 90s when I made this back in June, but the 90s can feel like 100 when you are outside all afternoon.
I got the squash from an imperfect foods delivery. My guess is they didn’t know what to do with the out of season produce.
I roasted it with walnuts and folded it into a kale salad with feta and chopped apples.
Now that it is August in real life, I’m actually kinda craving these autumnal foods! Who else is ready for a PSL? It seems too soon, but I can’t help it. It is still a scorching 105 here in Davis every day, so the leaves aren’t changing any time soon.
I served it with home made bread on the side and called it a day.
