I’ve basically been eating this lasagna on repeat.
It is REEEEALLY good. So good I’ve been eating it for lunch instead of salads and not giving any of the leftovers to the rest of my family. I feel a little bad about it, but sometimes I’m bad at sharing and what my family doesn’t know won’t hurt them. The kids don’t know they are missing out on the extra portions and I pack Kyle’s lunches so he’s probably forgotten about it (but maybe not)…soooo, leftovers for me!
Cold or hot, I don’t even care, it’s good both ways!
And here’s another thing about me. I don’t really like leftovers. It’s pretty rare that I don’t just give extra dinner fare to Kyle because I’m not big on leftovers. I’m not sure why this is the case, but that just goes to show you how awesome this dish is. Because for me to single handedly polish off the rest of it for my lunches…well that’s just not my style.
The other reason I haven’t been posting is because I’ve been eating this same dessert on repeat.

I’m trying to pace myself and it’s actually working! Moderation?? Me?? I am as shocked as you are mom.
So I have been working through the tray slowly but surely.
The only other meal I have to show off before I get to the long weekend (which was such a fun one) is this random sauté thing I threw together.
I was going over to a wine night with girlfriends and knew I’d be eating there, so I made something for the rest of the fam with what we already had on hand.
[Last week’s meals were super repetitive and scavenger-esque because I was trying to get by without much of a grocery trip]
So this dinner was a play on a beans and sausage dish. I added rainbow chard to get something green into the meal, and then added the entire can of baked beans – liquid and all – to simmer. And then eventually the sausages. How cute are these little mini sausages from aidell’s 🙂 It all worked together nicely and I think it was great for a one skillet meal. And it generally meets my green + grain + protein formula (subbing beans for the grain works out since they are both the carb portion of the equation). Everyone loved it, so I’d say that’s all you need to know.
And now how about some iPhone snapshots from the last week just because. It’s already cracked into the 100s this week, but last week we took advantage of the perfect 80 degree days with outdoor lunches and snacks. Once summer really hits, it’s blazing by noon so it’s good to feel a bit of spring. Even if it’s only for a week. 😛
Our garden is booming.
Some times I like our free afternoons even better than our gymnastics/soccer/farmer’s market scheduled ones. Because then we get to “adventure” on our scooters and bikes and just explore wherever the kids want.
On Thursday we went alllll over the neighborhood. Down new streets with no plan or purpose.
We used to bring Dancer apples all the time back when I went on morning runs with the kids, but we fell out of the habit once the weather got too cold to bring them outside at 6 am…that’s when garage DVD workouts take over!
Making “nature meals” is a new thing…and full disclosure it’s pretty much just rock soup.
V asked to look at a cookbook with me one day after she woke up from her nap. ARE YOU KIDDING ME!?!? Dream activity with my kiddos! Then P joined in on the action. They ended up deciding on salmon which is how this meal came to be.
Which I made while they made butterflies with toilet paper rolls. Sometimes being a hoarder of crafting supplies pays off. Other times, it gets you in trouble with your spouse.
