Pasta with salmon and snap peas

This is an oldie, but worth sharing in case you wanted to give it a try.

I have only cooked pasta in the instant pot a few times, but needed to get it done quickly without being in the kitchen, so pressure cooker to the rescue.

I cooked a pound of shells for one minute on high pressure with just enough water to barely cover the noodles. Then I left it to release naturally and it absorbed most of the excess liquid in that time. Worked well enough at least!

Before dinner, I sauteed snap peas in tamari and olive oil and roasted salmon (400 degrees F x 15 minutes). The salmon was coated in oil, salt and pepper.

I swear I could go blow our entire grocery budget on salmon if I let myself. I crave it allllll the time. Cooked to perfection…it is last meal worthy.

And then I put it all together!

With a few glugs of tamari and olive oil on top.

Slightly random but very good.

    But roast salmon at 400 for 15 minutes? Mine takes 450 for 17…

    how fat are your filets of salmon? Sometimes it takes longer but you can kinda tell in the pic these were pretty thin ones (also, i dont like salmon that is even slightly overcooked) šŸ™‚
