Does Trader Joe’s cater? No, but they may as well have, since our dinner party was dominated by their products.
Last week I got together with a group of friends to make dinner and celebrate our So Cal relocation – it was so fun, I sense the birth of a new tradition (Gilmore Girls Fri Night dinners anyone?).
On the menu:
- Hummus apps
- Quinoa salad
- Spinach salad
- Fresh bread
- Fun
Kyle got to chopping, while the girls got to eating chatting.
My friend’s kitchen is about as opposite from our NY kitchen as they come (large, spacious, new…need I go on?).
While the quinoa cooked on the stove, we dug into the appetizers.
Multi-flavored hummus. Yums.
Meanwhile, the following ingredients went into a big bowl:
- Raw corn
- Red bell pepper
- Fresh mango
- Black beans
- Red onion
- Fresh cilantro
- Ginger
- S&P
After the quinoa was done and had a bit of time to chill, it was added into the big bowl of chopped ingredients.
Ta-ta-ta-taaaasty.
The accompanying salad contained spinach, strawberries, avocado, dried cranberries, rosemary pecans, and a balsamic vinaigrette dressing.
Plus bread.
All together now.
I started with a bit of errthang.
And had second helpings of both salads.
Definitely a great evening. Can’t wait to make it a regular occurrence.

I had SUCH a great TJ’s trip today too! I seriously need to try quinoa, your summer salad with it looks so refreshing :0) Hope you’re having tons of California fun!
I love TJ’s flaxseed & veggie tortilla chips, soo addicting. Think I’m going to have to try that spinach salad asap.
Oh my gosh, I’m torturing myself – reading your trader joes post and WF Ode in one sitting. Maybe I’ll move to California, too.

I LOVE Gilmore Girls. Seriously, I DVR them all the time and even own a couple seasons on DVD. Glad to know there’s someone else who can appreciate it…
