Nasoya Toss’able Tofu with a butternut and kale salad

Nasoya just came out with a new tofu product that I think could make packing lunches (or eating them at home – whatever) SO MUCH EASIER. Toss’ables are pre-marinated cubed tofu chunks that are ready to go for whatever meal you want to add them into!  The balsamic vinaigrette especially caught my eye because my favorite vegan Winter salad called for balsamic dressing so the tofu would go PERFECTLY with the salad, not to mention it would add 14 grams of plant-based protein (per 3 oz. serving). Kale for kids

Kale and sweet potato salad with tahini, feta, and pistachios Ingredients: 2 bunches of kale, destemmed and shredded 2 sweet potatoes 1/3 cup dried cranberries 1/3 cup pistachios 1/3 cup feta tahini dressing (below) This tahini miso dressing should go on everything.  You will loooove it.  Massage that kale and add the rest of the salad ingredients and dig in! Summer sneak peak

Even though it’s suddenly unbearably hot in Davis, I am so excited for summer and have been planning all kinds of activities for us to do as a crew of three while P is out of school for the next few months. Compound butter

I never knew butter on steak was a thing, which is probably because beef hasn’t been in my life much until this decade, but now that I’ve eaten a few steaks I’ve started to catch on to the tips and tricks of preparing it.  Nothing has come close to Bob’s Steakhouse in Carlsbad.  Nothing.  That was the best meat I’ve ever had in my entire life without question.  A close second was the meat I had at Mulvaney’s B&L which had a balsamic butter on top.  I made a mental note at that dinner.  Butter… Read more >

Noodle trifecta

Let me introduce you tooooo… the noodle trifecta. Zucchini zoodles + butternut squash (boodles??? can we call them that??) + brown rice spaghetti. I don’t think I can get on board with calling the squash spirals boodles.  Let’s just pretend I never suggested it, ok? Since I’m still feeling the Mediterranean flavors big time, this sun dried tomato pesto shrimp pasta dish hit the spot.
