Go Chica Go

We are in Chicago WITHOUT KIDS! We landed on Friday evening and despite it being JUNE (!) it was pretty chilly and foggy.  Bummer.  We went straight to our hotel and changed for our first dinner reservation at 9 pm at Gibson’s. Lacking in produce

For my last meal with kale in a decade (dramaticcccccc) I used the rest of this tahini miso dressing with kale, spiralized butternut squash and pecorino romano. Strawberries season

Kyle was gone earlier this week and look what he came home with!? Breakfasts have been different lately.  I’m really into starting the day with fruit right now and I can’t seem to get enough berries (but then I add nut butter to hold me over). Poke in Davis

How good does this look!?!? I got take out for farmer’s market this week from Zumapoke here in Davis and it is officially our new go to spot. Reasons I loved it: The portions are SUPER generous (this was the small bowl with three scoops of poke – the large comes with five scoops) Their ahi is from Hawaii and it’s good quality They label their sauces for people with allergies (not just with vegetarian and gluten free but also peanut which is awesome because I would never think it would be in the miso… Read more >

Nasoya Toss’able Tofu with a butternut and kale salad

Nasoya just came out with a new tofu product that I think could make packing lunches (or eating them at home – whatever) SO MUCH EASIER. Toss’ables are pre-marinated cubed tofu chunks that are ready to go for whatever meal you want to add them into!  The balsamic vinaigrette especially caught my eye because my favorite vegan Winter salad called for balsamic dressing so the tofu would go PERFECTLY with the salad, not to mention it would add 14 grams of plant-based protein (per 3 oz. serving).
