I’m sorry I didn’t do leftovers justice here on the blog, but we didn’t have too many! I gave the kids pumpkin pie for breakfast the day after Thanksgiving because that’s kinda what you do right? I kinda fell out of the habit of blogging for a second there…blame it on getting back into the swing of the real world and dragging my feet during the process. I started the day with a cinnamon raisin english muffin and butter. For lunch I made a Brussels sprout saute and then added cheese and almonds on top. These almonds are THE BEST you will ever taste. How was everyone’s holiday? My kids had the whole week off which felt like both a relief and a burden – the freedom to fill our days with the activities we enjoy on our own timeline is something we have greatly missed, but I’d be lying if I said it was all easy breezy.
