The Junky Salad

Continuing the easy path to dinner bliss… Remember the taco salad recipe I posted from my reunion party? I made it!  And it’s just as junky as ever, but slightly…how do I say this…fresher??  More nutrient dense? Foodie in the making

Originally, I was going to make this Thai roast chicken to add to these leftovers.  But then I ended up giving Kyle some of the noodles in his lunch so there weren’t enough left to feed the fam.  Oops!  It’s all good though, because now I have a small serving’s worth that I may just save for myself! Gnocchi drama

Here’s how mornings this week are going. V wakes up before 6 but stays in her room until her clock turns green at 6:20 to come wake me up.  She doesn’t jump on me or anything, but somehow the fact that it’s so early feels on par with the physical assault of a cannon ball to the face. What I Ate

I made a big batch of coconut milk chia pudding that will last a few days for breakfast when combined with nut butter and fresh fruit. It’s almost time to pick our nectarines! They aren’t quite ready but the birds are starting to want to get at them.  Lay off my fruit!! Hi July

July is off to a great start!  The kids and I have ben having a blast together. They made these sea creatures and then we painted an old Costco box to be the ocean. FYI, you can save egg cartons for painting by putting water in the middle and the different colors in the egg holes. It’s a jellyfish and a lobster!  Naturally.
