Last day of September

I thought this was going to be the last tomato harvest but I was wrong… A few days after picking all of these I went to rip out the plant… I TOLD YOU it is taking over the yard!  It’s a monster! Beast & Bounty

Foodie girls night! The only way I can go out these days is with my girlfriends because we don’t have a babysitter.  Ugh.  I could write a essay about why we don’t have anyone to watch our kids, but the reality is I’m just making excuses for not making it a priority.  The kids have attachment issues so it’s not for lack of recommendations…blah.  We were doing okay for a while (omg I just looked it up and it was last winter!).  We went out a few times over the span of a few months… Read more >

Cheese and chocolate

Let’s get this pesto party started! First up, butternut noodles with arugula, baked salmon, pesto, and manchego. About the manchego… I am still enjoying the cheeses from the Costco sampler I got.  It has proved to be a very economical purchase.  And to think I hemmed and hawed about it for AN ETERNITY before Kyle grabbed it from me and threw it in the cart. Honey Roasted

While both kids were in school I had some time to myself so I went grocery shopping and prepped a bunch of stuff for the week. Above are some peanut butter oat and coconut flour balls, which I froze before bagging them up to keep in the freezer for easy grabbing.  They turned out okay, but I think they needed more oats.  Next time!  For now they are good enough. Three meals and dessert

I’ve got a “what I ate” style post from last week to share.  I left out my coffees and kombuchas though. For breakfast I had a smoothie with frozen berries, frozen banana, coconut milk, and collagen. With a scoop of almond butter on top.  No matter how hard I try to stir the jars throughout the process of eating them, it always seems like the bottom is super dense and dry by the time I get down to it…almost like almond paste.  I don’t really mind, but ideally I’d like the in between smooth-but-not-excessively-drippy texture. … Read more >
