A week of lunches

I’m happy to report I successfully used the mandolin without slicing my fingers off. I’ve been waiting to use these watermelon radishes and had nothing in mind, but then I went to make my favorite Thai kale salad and realized I didn’t have anymore roasted butternut squash or sweet potatoes on hand. So much pesto

Listen to this…walnut pistachio pesto, shredded chicken, roasted sweet potatoes, arugula, aaaaaand pecorino romano. A lovely little bowl, right? The key is having delish pesto. I shredded chicken that I baked in the oven and tossed it in pesto. Then turned the remaining pesto into a dressing for the arugula. You can do a bunch of stuff ahead of time with this salad and then it comes together super fast. You could even do the prep over the weekend! Veggie forward

Every once in a while I think we (I) could go back to being vegan no problem. I love vegan food and am quite content eating heaps of veggies all day long, but I go through phases where I want salmon at every meal, too, so perhaps I should just forget labels and continue to eat how I am. Persimmon walnut bread

I have amazing news! I took TWO NIGHTS off of chocolate. This is a big deal because my dessert habit started to slip back into old ways…and the portion sizes were growing and growing. Cutting through the chaos

V has to bring in something for the letter of the week and they were on “i” last week and she wanted to bring in “ice cream” so I decided to make that into a craft rather than send her to school with a frozen carton.
