Bean and Squash Enchiladas

One of my friends made sweet potato and black bean enchiladas and as soon as she told me about it, I couldn’t get it out of my head. It took three whole days until I was able to make it happen. And that was because I wanted to wait for my CSA box (both so I could use some of the stuff in it and so that I knew what else I’d have to get to supplement it). Lucky me, I got a butternut squash! And this weird purple lettuce? I was planning on adding… Read more >

Most of the week

Before I got around to making my next loaf of persimmon bread, we had to get through this baked oatmeal. It didn’t take long though. And by Wednesday everyone was fighting over this again. My brekkies have been light, as I mentioned before, mainly liquids. And thanks to my overflowing CSA box that I got Monday I was able to make enough juice for at least three days. Before dipping into my new box, I used up ALL the rest of the produce remaining in the fridge, including all the leaves and stems from the… Read more >

Family weekending

We finished off our 3rd/4th (?) loaf of persimmon walnut bread over the weekend and Kyle just asked if we had any more this Wednesday. Looks like I have some baking to do! And since the avo was the size of my head, I kept my serving size to 1/3 of it rather than the usual 1/2. But I’m going to… Read more >

Keep calm and veg on

I ended up skipping my imperfect produce box for last week, but I still managed to avoid the grocery store, except for a mid week run for a few random essentials. Forcing myself to use every single thing up is not a new practice. I’ve always been good with buying no more than we need (with the exception of chocolate!) and then making sure it gets used up before I buy more. That said, I miss the ability to have total control over our meal planning. And losing control is a HUGE deal for me…. Read more >

Winter nuts

If I ever had to remove nuts from my diet I really don’t know if I could survive. I mean, I had to do it for a while back when P was allergic and I was nursing him so obviously I’m being a little dramatic here, but seriously, a year or so ago I tried to limit my nuts to one meal a day and even that was a struggle. So nowadays I just try not to eat the same nut more than once in a day. This is harder for me than it sounds,… Read more >
