My favorite lentil salad

This is one of my very favorite salads and I know I often show photos of it on the blog, but somehow I’ve never shared the recipe. It’s from ATK’s The Complete Vegetarian cookbook, which is always my go-to when I’m feeling uninspired and craving plant based meals. Orange and green

Kicked off yet another Monday on the right foot…with a pile of produce. I can barely keep up but it’s not exactly something I’m complaining about. Sometimes after a week off of blogging I look at my photos and I am SO confused. I never had any breakfast photos (there’s too much going on in the morning!) and there always seem to be far more pictures of chocolate plates than there are days of the week. Back into bread making

Saturday was basically entirely on the go. We drove to Roseville for a brunch play date with some friends and I brought a veggie and potato egg dish, which was basically tortilla española in a pyrex dish. So many veggies, so much time

There are so many greens in my life right now! I don’t know why it didn’t occur to me sooner, but now the kids are helping eat up the CSA goodies in their lunches. I give them plenty of veggies throughout the day, but I had gotten in the routine of the usual carrot, broccoli, green bean routine… So instead of that, I made them an Asian stir fry with two heads of bok choy that I was eager to use, as well as edamame (which they love) and then served it over brown rice….
