Home is where the CSA is

I’m going to eventually get around to writing about the rest of our time in Idaho and Oregon later, but for now I just have too many gorgeous veggies to show off. Oregon and Idaho I

Another June trip to Idaho in the books! This time we drove up to visit Kyle’s parents with a stop in Sunriver first. If you haven’t been, it is crazy beautiful. I highly recommend. We rented a place with another family and had the best time. Sunriver Brewing Company has a restaurant right in the heart of the village, and despite the wait being obnoxiously long, we still enjoyed it very much. Sur la table cooking class date

We have been gone for a little over a week…first in Sun River with friends…and now up in Idaho with Kyle’s parents. Having no agenda makes life very relaxing. We even got a date night! Summer quinoa crunch bowl

This salad has more prep than salads I usually post about, but everything can be done in advance (way way in advance if you’re on top of it with your Sunday prep game) which means that when it’s time to eat, dinner is little more than assembling. I’m about to admit something a little embarrassing… The first time I saw these? I didn’t know what they were and I gave the whole beans to my kids to eat. Raw. AND THEY ATE THEM! Without batting an eye. Pods and all!! So I didn’t think anything of it.
