For Christmas I got chocolate

The weekly menu

Full disclosure, many of these meals were from a while ago. Kyle was gone for a week and we have had a bunch of holiday events and whatnot so our bonkers schedules have made meal planning a bit different these days. Some weeks it seems like we barely eat two meals as a family. But it’s not always like that. So here are some of the meals we DID have together. Tis the season!

Ho ho ho! I love this time of year. ESPECIALLY with kids. It’s pure magic. I’m sure the novelty of cozy indoor activities will wear off long before February, but for now, I’m soaking up all the time we are doing holiday themed crafts, baking together, doing puzzles by the fire, and listening to the Frozen 2 soundtrack on repeat. Don’t worry, though. Thanksgiving leftovers soup

I love this time of year but it’s definitely a little crazy! You PROBABLY have a bunch of thanksgiving leftovers that you want to eat in fancy sandwich form (bless the moist maker!) but in the off chance that you are sick of turkey sammies…here is a yummy way to transform your holiday fare into something new. The weekly menu

Ever since Gena’s cookbook introduced me to the combo of lentils and roasted cauliflower I have been super into it. For this meal, the only real effort in terms of prep was roasting the cauliflower and making the dressing. Beyond that it came together quite quickly, especially since I cooked the lentils in the rice cooker. The dressing was a cross between a vinaigrette and a creamy dressing, thanks to the tahini.
