Powermeals

I got these in the mail last week from Earthbound Farm.    As a lover of greens, this was a BIG deal.  Organic, too!  The funny thing is, usually I’m super anal picky about my salad ingredients.  99% of the time I prefer making my own and I definitely shy away from conventional dressings.  But I guess that makes Earthbound Farm’s powermeals the exception.    The salad comes with a packet of mix-ins separate from the lettuce…which (as you can see) are all individually wrapped.  Since I had made enchiladas the previous night, I decided… Read more >

Vegan cupcakes negate a DNR order

This photo really doesn’t give an accurate picture of my day’s eats because it looks the same as all my other days of pre-packed meals. I had a rough morning (no workout, only 1/2 a cup of coffee) made rougher by the fact that my patients were not doing well. I had one person trying to code on me (HR 40s, SBP 180s, O2 70s) while another was trying to get to the bathroom to throw up (with his broken & non-weight-bearing L hip). I basically had to ignore the puking patient and get my… Read more >

Windy Thursday

Evidently Los Angeles kiddos are getting their version of a snow day today.  Last night I was tweeting about the crazy winds, so it’s not surprising.  A lot of people lost power in Pasadena and downtown LA too apparently, including Ethel who got to go home from work early.  I’m actually a bit jealous (of the kids, not the people who lost power) since I don’t get days off for weather or holidays (or anything).  Pity party over.  I’m going to Argentina in 6 days.  This pumpkin banana smoothie dropped my body core temp about… Read more >

Gulfstream Wild Rice Salad

The star of my lunch was…wait for it…   Leftovers!! How’s that for anti-climactic.    Predictable.  Anyhoo.  Sorry my eats have been so repetitive over the last few days, but I’m trying to clean out the fridge before we leave next week.  Only one week ‘til Kyle and I are off to Buenos Aires!!!   At least I have a recipe for you.  It comes from a restaurant in Newport Beach called Gulfstream (part of the Hillstone Restaurant Group) and was part of our Thanksgiving feast. Wild Rice Salad (vegan, gluten free) Ingredients: 1 cup… Read more >

Retiro Picnic

May 16th We were supposed to meet Alene & Ethel in the morning, but they needed extra zzzz time so the Dieden clan headed out to take on Madrid once again as a party of five. Starting with Atocha, we took in the station from afar, then up close, then inside. I hadn’t seen it since the bombings in 2004, so I was curious how different it would look from the first time I saw it (in 2002). It felt like a greenhouse because of the section of plant life with the clear glass windows… Read more >
