Hi from South America

I’m not really too sure how to post from my celly. I’ve only had my iPhone for a few weeks so it’s a miracle I even had the foresight to get the WordPress app prior to leaving the country. Anyway. We will be back in the EEUU in a few days but until then here’s my best attempt at mobile blogging. Our apartment’s view in Buenos Aires… The one semi-post worthy photo from Punta del Este, Uruguay… Ciao!

Readers request: quinoa

I haven’t bought quinoa yet because it’s SO expensive at New Seasons and Trader Joes – where do you get yours?  I get it at Costco or Whole Foods.  It’s pretty inexpensive in the bulk bins aisle.  If you don’t have either of these stores near you, you may want to check online.  Amazon sells everything and places like nutsonline or Bob’s Red Mill also have good deals.  I pay a bit more for organic quinoa, but that’s your call.  Using the rice cooker, do you just hit the white rice button and wait for… Read more >

Yerbabuena in Madrid

Last I left off, we were enjoying some down time back at the hotel. Madrid isn’t that big – we ran into Ethel and Alene as they returned from Toledo.  This gave us some time to plan out our evening. We decided to meet for drinks at an Irish pub my dad had been eyeing the entire vacation called Ulysses. Standard. Power salad (giveaway)

I raved about Earthbound Farm’s organic powermeal salads before, and now I’m gonna give you the opportunity to win a free one to try for yourself! I tried the blueberry quinoa protein salad before we headed to South America.  Baby spinach, quinoa, sunflower kernels, dried blueberries, and a balsamic vinaigrette. Unlike last time, I made a slight alteration by adding silken tofu.  It wasn’t because I thought the salad needed more protein, it was because I had half a box of ‘fu that I didn’t want to waste.  This quinoa tasted different than when I… Read more >

Warm crispy crunch

This is not a recipe. It’s completely measurement-free. Here’s the assembly in photo format… GF cocoa rice crisp cereal *It’s not certified gluten free, but the ingredients are GF, so the only source of gluten would be from contamination in it’s processing/production.  Basically, I’m guessing Whole Foods didn’t want to pay more to get certified or use a separate factory/co-packer. GF peanut flour + USV almond milk And bananas. Mashed. Mixed. Microwaved. Munched.  🙂 These are the kinds of things I create for myself when my GI system is being lame and I need fodmaps… Read more >
