Lunch (date) lady

I just found out they are piloting full day kinder for our neighborhood school next year and it’s been a rollercoaster of emotion. On the one hand, I understand why working parents want longer school days for child care, but the transition for V is going to be a big one. She still naps periodically and her preschool is only a few hours of a few days per week. But I think the biggest thing is that I’M not ready! The weekly menu

I’m a little behind with sharing last week’s dinners, but Kyle is out of town again so the bar is pretty low for me. What day of the week is it? What do we have today? What am I making for dinner? First up, a veggie packed grain bowl. Quinoa + roasted Brussels sprouts + roasted squash + avo + pepitas + orange miso vinaigrette. Superheroes & salads

Oops, I did it again. Except not an “oops” at all, rather a very deliberate and joyful shopping experience. But before I discuss this next week’s eats, I still have a bunch of stuff from last week to share. Sometimes they want snap peas for breakfast. Works for me. Veggie quiche with chard & chevre

We have now reached the point in which a regular pie pan doesn’t feed our whole family, so I am essentially making deep dish quiches. I wasn’t sure how this would turn out, but it was awesome, so I’ll share so that you can make it, too.
