Chia pudding parfaits

One of our afternoon activities was making chia pudding parfaits. I thought it was pretty genius considering it occupied them and resulted in them prepping their own breakfasts for the next day. Salads and such

Here are some more meals to give you some inspo…or distract you from the news…whichever you need more right now. These are all from two weeks ago, before I did my last hurrah/shopping extravaganza. One gnocchi is barely enough, but two would be way too much. Dilemmas dilemmas… Since our veggies were limited, I used frozen shredded zucchini (I have one last bag in the freezer from last summer) and then I added Bitchin’ pesto sauce plus steamed cauli. A bowl with three B’s

Now, more than ever, my basic hippie bowl formula is the way to make your life easier as you contemplate what to make with your dwindling grocery reserves. Green + grain + protein I typically opt for some kind of lettuce for the green category: kale, cabbage, spinach, whatever. But you could choose whatever you want. Peas, collards, asparagus…go crazy! Birthdays in isolation

To answer a few questions up front: no, I haven’t gone grocery shopping in over a week, but I did go BIG right before the shelter in place mandate because I had a sense it was coming. On the way back from my parents’ house last weekend, I found out they were ordered to keep indoors along with seven counties in the Bay Area. A Trader Joe’s dinner

I have another meal made entirely from TJ’s items. And similar to the last one, it was a CINCH to throw together and tasted awesome. I purposefully made a ton so that I’d have leftovers, although there wasn’t quite as much as I was hoping for because it was such a hit!
