The Italian Job

It’s been too long since I made Kyle lasagna… He worked from home a few days last month and so I knew he’d want breakfasts and lunches at the ready. This lasagna took care of his lunches. And this strata took care of his breakfasts. I used three cheeses (ricotta, mozzarella, and parmesan), but kept it simple otherwise (no meat or greens). He gave it two thumbs up. I’m sitting across the table from my kiddos, who are playing with play doh. They are on hour number two at this point, so getting my computer out to try to do something is practically begging to jinx them out of their occupied state. Mexican Quinoa Corn Salad

I made a recipe up and wrote it down, so that’s something new. We all loved it, too, and now I’ll share it with you. I used lactose free plain yogurt instead of sour cream, but if you want, you could sub a non dairy yogurt or greek yogurt or sour cream. Whatever you’re feeling in the dairy department!
