Weeknight meal ideas

And while we are on the subject of squeezing in our last few summer faves, I’m gonna throw it back to this melon poppyseed salad that I made in September with the last cantaloupe of the season. Oh how I love this meal. The recipe is here as a reminder. On the side we had the crescent rolls I mentioned here. I also remade this instant pot enchilada casserole. Once again it was a cinch to make and provided lunches for Kyle for the whole week. Such a winner! I know I promised to get… Read more >

Squeezing in the last of summer

Ok so this was the easiest and best grain bowl. I have to share so you can make this before summer produce is gone forever. First I made some barley. I used 1 1/2 cups uncooked and it yielded the perfect amount once cooked. In addition to that, I tossed in a pint of cherry tomatoes (halved), 1 cup of… Read more >

Instant pot meat

Remember the other day when I posted about having leftover shredded chicken? That’s because I prepped SEVEN in the instant pot previously. Talk about getting on top of it! Later I added avo and served them in whole wheat tortilla. I added sunflower seeds and grapes too but forgot to take a pic before we dug in. A few… Read more >

Your new favorite lentil dish

If you’re looking for a new lentil recipe, this butternut squash with lentils and feta is IT. Both kids LOVED it and begged me to make it again stat. I also thought it was stellar and was wishing I had made double the amount. It makes a good side dish, but it could easily be a main on it’s own. And I wouldn’t have minded leftovers for lunch the next day either. The NYT has a winner here for sure. It was our first butternut squash of the year which means it is officially FALL…. Read more >

Hi! It’s October

I just uploaded 225 photos from my camera onto the computer. So now what are the chances I ever get around to doing anything with them on the blog?!? I have been so swamped with this distance learning life (and backyard remodel) that I haven’t had a spare second to touch base here on the blog. But I’d be lying if I said I missed it. I haven’t missed it. I haven’t even had a second to think about it! Also our internet can barely handle two kids on zoom all day so I haven’t… Read more >
