How I’ve been using up juice pulp is with simple and simpler recipes. Like this quick savory breakfast fry. Quinoa & smoky tempeh strips with leftover carrot pulp (or whatever pulp you have on hand…be it kale, cucumber, etc.). Added to a pan with non-stick spray or olive oil and heated until it gets crispy. Served with a side of vitamins. Yum. The weekly planned dinners have continued with major (budget saving) success, but since I’m serrrriously behind in blogging, I figured I’d give you a teaser of what’s to come. My mom got into town late Wednesday night, so on Thursday we spent the day shopping, lunching, and shopping some more. We have both been to True Food Kitchen before. The most massive banana ever. At the perfect state of ripeness. A work breakfast (flaxy oatmeal) that I didn’t end up eating because I got cafeteria french toast instead. GAHHHHH!!!
