I know this is not a popular opinion, but I don’t really love pasta. You probably know that since I don’t often share recipes with pasta. I’ve always been this way…maybe it has to do with the fact that I hated tomatoes growing up, so whenever my mom would make spaghetti or lasagna I was less than enthused.
Kyle, on the other hand, LOVES pasta. He could eat it every single day, especially in comforting “homey” dishes with tomato and cheese. For that reason, I usually make him pasta for his lunches (shout out to TJs butternut ravioli and cheese tortellini for making my life so easy).

I think the kids could go either way. They don’t go crazy for it, but they like it fine.

Last week (or weeks depending on how long it takes me to post this) I got a major pasta craving.
Sometimes I see food photos on instagram because I do follow blogger accounts, but I usually scroll right past them (because let’s be honest, I’m on IG looking for cute kids photos or parenting memes).
Anyway, I actually remember seeing a picture of cheesy pasta and meatballs and thinking ‘that actually looks pretty good!’. So I decided to make it for dinner that very night!

Fortunately, I had meatballs in the freezer, and the rest of the ingredients are pantry staples, so it was pretty easy to pull off.
I cooked the elbow pasta in tomato juice (from a jar of tomatoes that I canned over the summer) and then nestled the meatballs in until they were cooked. Before serving I added spinach and mozzarella.

Looks pretty great right??
The mozzarella pulled apart in a long gooey mess, which I’m not used to since it wasn’t vegan cheese (I’m doing more experimentation with wheat and dairy in case you haven’t noticed). Then I added a bit of parmesan on top too, just for good measure.

Verdict?

Meh.
Maybe I’m just not a pasta person??
Everyone else loved it, but it just didn’t wow me. Am I a freak? Or do others feel like pasta is overhyped too? It seems like the whole world thinks noodles are sooooo good and comfort food is hashtagthebestever, but I don’t get what all the fuss is about.

I agree with you. I don’t dislike pasta but it’s just doesn’t amaze me like most people. I could take it or leave it TBH. My family are pasta fanatics tho!
I’m with you…I love pasta more at restaurants than when I make it at home š But let me suggest something that may help. I always season my noodles – a little salt, garlic powder, pepper and italian seasoning. It is a big game changer because otherwise past is pretty bland.
I am definitely not a #pastaisthebestever but I do enjoy a good meatballs and pasta dish! Do you mind sharing where you found this recipe or if you have an update to the recipe that you’d be willing to share? I am a NOVICE cook so I need a recipe to follow! š
I am not a huge pasta person either! My husband could also eat it every night and just got a pasta roller for christmas š I love good bread, but for some reason a big bowl of pasta is just not something that appeals to me that often. I do enjoy a good pasta bake with shorter noodles though, as long as there’s a lot of other stuff in it besides just pasta. I think part of it is I just enjoy a lot of texture.
