One day of eats

Remember when I went through that waffle phase, wherein I made myself waffles every. single. morning. for over a year straight????

Now THAT was commitment!

I can’t believe I had the time or energy to do that every day from scratch.

I kinda forgot all about them for a while there, but then yesterday I had a hankering for them (plus a heaping mess of cashew butter on top!) and decided to go for it.

So I made myself a big ‘ol waffle. Well, actually I made two (full) waffles, but I only ended up eating 3 of the 4 corners, so I still have another 1 1/4 waffles left for another day. Heyooo…it was just as great as I had built it up to be in my head, so I am thinking this breakfast phase may be returning yet again.

I didn’t measure anything but I will next time so that I can share. The ingredients were:

  • mashed banana
  • egg
  • almond flour
  • Vega vanilla protein powder
  • Califia toasted coconut almond milk blend
  • baking soda
  • salt

Imperfect produce delivery! They texted me that they were two minutes away and next thing I know I hear them setting the box down on the front doorstep (they didn’t even ring the bell because V was napping and so I wrote “just leave on doorstep” under the spot where they ask for delivery instructions).

Note: no plastic

For lunch I made a kale salad massaged with Nugget’s sesame soy dressing and topped with avo, tofu, and almonds.

I had carrots and kombucha on the side, too.

And then for dinner I made a farro grain bowl, which everyone went NUTS over. I should have made triple the amount because they all wanted more and more.

I started by cooking 2 cups of farro and tossing it with 2 bunches of kale and this lemon miso vinaigrette (only I used 2 tbsp miso instead of 2 tsp because I loooooove miso).

Then I roasted 2 cups of chickpeas until they were crispy crunchy.

To serve, I topped the kale/farro mix with the chickpeas and freshly grated parmesan.

I can’t believe what a hit it was with everyone considering it’s basically made from little more than pantry staples (grains & beans for life!).

I had this Lula’s bar later that night, too. I got this from Santa and I’ve been saving it for a day when I’m realllly in the mood and today was that day.

Slowly but surely I’m working my way through the obscene amount of chocolate I got for Christmas
