One and not done

I made my own version of the cheesy broccoli soup in the Skinnytaste cookbook. It was okay, but I have a feeling my alterations made it slightly less indulgent than the original recipe. It was good nonetheless and the whole family finished it off, even though it was supposed to yield 6 servings. That’s par for the course with us though. The changes I made basically revolved around the dairy called for – I used goat cheddar and pecorino romano and nixed the milk for more broth. I also cooked it in the IP to make it more hands off as we came and went from our various activities. Oh, and my immersion blender died as soon as it hit the liquid, sooooo, yeah, it was different (lumpier?) than Gina intended. But good!

I am liking the skinnytaste One and Done book a lot…I’ve made 3-4 things now and I don’t plan on stopping anytime soon. There’s a lot I have bookmarked. 🙂

I’m starting to think I shouldn’t bother taking a pic of my dessert because I ALWAYS go back for seconds…and sometimes thirds. Or maybe my goal should be to serve myself and not go back for more. That requires true honesty with myself at the start of things though.

Here’s where I started the following night. But I ended up having more of almost every part, especially the Hawaiian Host dark chocolate covered mac nuts! I just found the bag hiding in the pantry from our last trip to Hawaii (almost a year ago!) and was SO EXCITED that it was unopened. Yummmmy.

Ok, so I did eat more than chocolate that day though.

The counter in the kitchen is such a disaster with the produce overflow right now and school work and who knows what else…but as you can see we had taco salads for dinner.

The left version is naked before it turned into the version on the right…covered in chips.

I had texted Kyle at work asking him for dinner ideas because I was too lazy to go grocery shopping and wanted to make something with stuff we had on hand. He sent back three ideas and this was the one that worked. Phew! And as a result, I think I actually managed to skip grocery shopping altogether last week (except for picking up our student farm CSA from on campus).

    I can’t wrap my head around forgetting about a bag of choco covered macadamia nuts…! But obviously exciting to be reunited with them :))
    Taco salad sounds awesome- and I’m in a salad rut lately yet have a packet of TJs taco seasoning i like so this is happening like tomorrow! I’ll probably just do a tofu scramble with the seasoning packet- i even have cilantro, salsa and some cherry tomatoes on hand 🙂

    Yes!! Tofu scramble, mexi style, is so good. Also, the bag of chocolate mac nut were buried under a bunch of other chocolate in a basket of sweets (I have a hoarding problem, obvs) so they weren’t in plain sight. Otherwise, yes, they’d be gone for sure.
