Now that’s a lot of food

Turns out I eat a lot.  🙂

Ha.  As if that’s a surprise.

Here’s my 99% complete documented eats (second helpings noted).

Breakfast: fried egg + 2 slices of chocolate cherry quickbread (half of one was eaten during the cooking process)

Lunch: 3 slices of GF bread toasted and topped with avocado/egg salad + carrots + grapes + strawberries

I get questions if I eat fruit (because I rarely show those little snacks) and the answer is YES!  Of course!  I tend to eat seasonally – so lately it’s been grapes, figs, strawberries, raspberries, and bananas (always bananas).  The main change (fruit-wise) since I started watching my fodmap intake is that I don’t really eat apples or stone fruit much anymore.  Or at least not nearly to the degree that I used to.  Cooked apples don’t seem to be too difficult on my gut and so I made a huge batch of applesauce in the crock-pot yesterday.  But it will mostly be used in baked goods or for P.

Lunch dessert: 3 TJ’s dark chocolate peanut butter cups + candied ginger

Dinner: nachos

Dessert: chocolate chip banana cookies (double the amount shown)

The next day I was out and about, so I had a quick slice of chocolate cherry bread at home, followed by a slice of GF toast + peanut butter + 1/2 banana (the rest was P’s).

Lunch was packed (for me and Kyle) and included:

  • sandwiches (Redwood Hill’s goat smoked cheddar with avocado and mustard)
  • grapes
  • crackers + Laughing Cow cheese
  • nuts
  • cookies

We took a family trip to Sebastopol to tour the Redwood Hill creamery and dairy (and meet the goats!!!).  It was so fun I’ll tell you all about it later.

Afterwards, we picnicked in the orchard with the eats I packed.  I wish I’d brought more food for me, I’m not sure what I was thinking with just a sando and grapes.

Snack: lasagna (I dug in as soon as we got home…hangry status).

Miraculously I didn’t spoil my appetite for dinner (it was ~4 pm when I ate it).

Dinner: Viccolo roasted tomato goat cheese & basil pizza (I had seconds and thirds) + carrots

Italian cravings like whoa!  If I didn’t know better, I’d say I was preggo again (remember how I wanted to molest tomatoes for 9 months?).

We get this pizza every time we go to Costco and I love love love it.  Even though Kyle and I each end up eating a whole pizza each (they come in two packs), they’re too good to pass up.  PS One pizza is like 1500 calories.  Don’t quote me, but I’m pretty sure that’s more than “normal” people eat in one meal.  Breast feeding FTW!!

Breakfast: GF pancakes + peanut butter sauce (PB + almond milk + cinnamon + stevia)

I went back for two more pancakes.

Lunch: Suzie’s corn thin cakes + avocado/egg salad + carrots + grapes

These corn cakes are a first time buy and I kinda like them more than rice cakes.  They’re thinner (obvs) and therefore easier to pile high with stuff.  Plus they’re cheaper than other GF carb options (like bread) with fewer ingreds.  Win.

Snack: Mary’s Gone crackers + Redwood Hill Farm’s goat cheese camellia (tastes super similar to brie but doesn’t harm my GI tract at all!)

Dinner: baked sweet potato + falafel patty + carrots + celery + Fresh ‘n Nova hummus (original and roasted red pepper)

Fresh ‘n Nova provided me with a lot of samples (even more than shown) and I am SOOOO obsessed. 

They knew I was already a fan because of several posts I wrote way back when,  So when they reached out to me to tell me about their expanded product line…ummm…yeah…I think I’ll give them a shot.  ;)

Hellooooo favorite goat cheese!  I love how it can go either way – sweet or savory – and this has just enough kick to take an average egg and cheese combo to the next level.  Mmmm.

Night shift eats: coconut, banana, banana chips, roasted nuts, Nature Valley bar (what. a. shift.)

After this I took a nap from 8:30 til 10.  Good but not great.

For lunch we were at the Farmer’s Market with Kyle’s brother’s family.  Kyle got a vegetarian corn dog from the Hotdogger + vegetable samosos from Kathmandu Kitchen.  I got the goat classic from Fat Face.

    I’m exhausted just thinking about taking all those pictures of food. Ha. And to be honest, those look like totally normal everyday eats for me (except veganized) and I’m not breastfeeding! 😉

    I’m also a little jealous that you can eat raw carrots with no issues. They tend to screw up my gut, but cooked it no problem. So strange.

    The chocolate cherry bread looks soo good!! Is there a receipe? I have worked nites for 20 yrs as a nurse and I just want to stress the importance of getting into a sleep routine. I missed my children when sleeping, but they survived. Remember you need to take care if you.

    I’m glad you also eat a ridiculous amount of food in a day. I swear I am ALWAYS hungry now that I’m feeding two humans. I pump exclusively, and I swear the first few weeks, every single time I pumped, my stomach growled like crazy and I thought I was going to die.

    Working as a nurse requires being on your feet and running around. You exercise. You are breastfeeding. You take care of the home (laundry, cleaning), plus shopping….all that requires energy! You are so thin….you need all this right now. Enjoy.

    I, too, would love recipes for the bread, lasagna, pancakes, cookies and the egg salad!! Hope you share!

    I’m SO glad I’m not the only one who eats a ridiculous amount. Seriously. I have friends that [somehow] survive on like 1400 calories a day. How that’s possible, I have no idea!

    PS: I’ve made your dijon, spinach, tempeh bake thing 3 [yes, THREE] times since you posted it. I’m addicted!

    And I typically just but Trader Joe’s tempeh. They all taste pretty similar to me.

    you can get tempeh at almost any conventional grocery store in ca – not just wf or tjs. its often near the produce section or whereever tofu is kept.

    Thank goodness I am not the only one who eats so much! I eat more than the football team at my high school, I swear. However, I think our eats are much more tasty (and healthy, ha!) than what they dig into 😉
    I can eat a pound of beans in one sitting, just saying. I must consume food like crazy throughout the day or else, well, lets just say I’m not the prettiest! Haha, I loved this post Elise. I love your blog!

    taking photos of everything has helped me do less of that! although last night i had multiple plates of nachos…but i really am attempting to not let myself get to the starving-must-eat-everything-now point because thats when i go bonkers. its hard w a little one that takes up most of my day but im really trying to give myself a little more love lately. you should too karen!!

    We’re close to the first nightfrost.. (cale tastes better after a good nightfrost, did you know?) What the frack, i’ll give it a shot soon. It’s grapeseason anyways and I’m always curious about new tastes.

    I LOVE frozen grapes and figs and pretty much all the other fruit you said you’ve been eating. Are the figs you get local? I’ve heard they’re amazing fresh from the tree, but I don’t have that option out here in CO and I’d love to try a fig that hasn’t been shipped 1000 miles, but they’re still one of my favorite fruits.

    Elise, thank you for bringing the frozen grapes in my life. Although they probably taste better when it’s nice and warm outside instead of rainy. And i do believe the make a nice ingrediënt in sangria, especially in the recipe I discovered in Portugal (red wine (fruity one), lemon, melon and a pinch (or two) wodka or rum… yummieyummie)

    A dollap of Fresh ‘n Nova garlic spread mixed in with the egg & avo would be amazing! It will add a hint of garlic with extra creaminess.
