I don’t get too political on HHH, but still, it shouldn’t come as a huge surprise that I’m a big fan of Marion Nestle.
FYI, the fact she shares her name with this company makes Kyle giggle.
Considering what she promotes, it is pretty ironic.
I subscribe to her blog Food Politics, which I highly recommend for anyone looking to stay current on important issues like pink slime, organic farming, GMO legislature, and other hot topics.
Her latest post deals with diet and weight loss which she addresses in her new book Why Calories Count: From Science to Politics. Check it out. Her approach is straight forward and I think you guys will like it as much as I did.

Anyway. I can hardly leave you without some food photos, so how about breakfast from the other day?
Those are smitten kitchen’s blueberry pancakes topped in a peanut butter sauce that I made with equal parts unsweetened vanilla almond milk, home-made peanut butter and maple syrup.
In case you were wondering, home-made nut butters are going like hotcakes [pun intended] in this apartment.
I guess I should get larger jars. Anyone know how many nuts a 9 cup Cuisinart Food Processor can handle?
I’ve been cautious in portion sizes on purpose though because I’m venturing into more creative flavors. Have you seen Ashley’s nut butters? The smoked paprika almond butter has been calling to me…not that I’d put it on pancakes…although stranger combos have been tried…
But back to breakfast fare. [It’s so easy to get off topic when it comes to nut butters]

Hippie tweaks:
- I halved the recipe provided
- I used unsweetened vanilla almond milk + 1 tbsp apple cider vinegar in place of the buttermilk
- I used Earth Balance in place of the butter
- I used frozen blueberries

I love Marion Nestle. I read her book about sports nutrition which completely changed the way I think about food. It helped me realize that its not about dieting but about feeding your body what it really needs. I celebrated finishing the book by welcoming back carbs and making pancakes! I didn’t know she had a blog so I can’t wait to check that out!
Are you still gluten free? I have been advised by my rheumatologist to try going gluten free to see if it aids my autoimmune disease. If you are, what flours and or products do you regularly substitute into recipes? Thanks!!!!!

I just realized I got my authors mixed up! The sports nutrition book was Nancy Clark’s but I read Nestle’s “What to Eat” which I loved! I love her relaxed yet enthusiastic approach to eating healthfully!

“what to eat” is a GREAT book and still applicable today even though its years old (which is hard to do in a culture with constant research yielding new knowledge about our food)
hi lindsey, the answer to that is yes and no. i follow a low fodmaps diet so im not entirely gluten free, but i do limit what forms of wheat i eat and when i eat them (i have to make sure i dont overload my gut with a ton of fodmaps from a concnetrated meal or lots of small servings over the course of a day).
i typically use brown rice flour and oat flour in combo for most baking needs. there are a few great sites that offer help in this area though. check out cara’s guide to GF baking here: http://forkandbeans.wordpress.com/basics-to-baking-gfvegan/

Do you read thesmartkitchen blog? She is the queen of homemade nut butters- i am without a food processor myself and afraid of breaking my one and only kitchen appliance (a decent blender) but she has every variation of nuts and flavors you could imagine!
