We hosted some friends for brunch on Sunday and I decided to make waffles. We also had berries and bacon to accompany the waffles, but the waffles were definitely the feature.
I was kinda lazy so I went with a mix. And since I thought there may be leftovers I went the GF route, so P could enjoy them, too.
I’ve never tried any Namaste Foods products but Heather has given the green light on the pizza crust mix so I figured that probably meant the rest of the products would be decent as well. Anyway, it was the cheapest option at WF…sold!
I made the entire bag’s worth (two portions) which called for coconut oil, eggs, and water (or whatever nondairy milk you want).
It made 16ish waffles (not totally full ones but our waffle iron is huge) and we all had 4. I shared a few bites of mine with P but he mostly just wanted blueberries. I’d already fed him beforehand so I didn’t really care what he did or didn’t eat, I just wanted him to stay entertained while the adults enjoyed our food.
It was so much fun and made me excited to have people over (as we make more friends!).
The rest of the weekend was lazy. I’m still dealing with some mastitis blah so my energy levels aren’t exactly amazing but I can’t phone it in with parenting. I went to the MD last week but it hasn’t completely resolved so my MD had me follow up with a breast specialist. Yadda yadda, hopefully it gets better soon.
In the meantime, it’s meal planning per usual.
On Monday we had the last MOPS meet-up of the year 🙁 so we went all out with the food [mocktails not pictured].
That cup in the upper right corner was filled with TJ’s GF granola and it was so good I went back for a few more servings (btw, that’s a home-made white chocolate berry scone next to the chocolate covered strawberries shown).
I love my mom’s group so I’m sad that we won’t have regular meetings again until after the summer months, but I think we will try to schedule our own play dates since it’s such a fantastic support network. In my small group alone, there have been 2 new babies and 2 new pregnancies (!) since I joined. If there’s ever a time for extra help, it’s when your family is expanding. I am the newest mom so I hang on every word and bit of advice they offer up. Not only are wonderful wives and parents, but they have become good friends too. Okay, enough sappy stuff.
I scored some sweets. I used to be a huuuuuuge sugar fiend (bin candy was totally my jam), but in the past several years I’ve kinda gotten over it. Ever since I started blogging, actually. Nowadays chocolate is way more my thing (which is a total flip flop from my younger self who preferred anything and everything sour or gummy). Oddly, these jelly beans hit the spot. But so did the chocolate. I guess I’m not too picky when it comes to dessert food.
Funny, the same thing has happened to me. I’ll devour almost any kind of chocolate-related thing now, but have no problem turning down the gummy worms, jelly beans, hard candies, and the like that I used to thrive on as a kid. Weird. 🙂
haha I feel you– Im not too picky how I get my sugar, but I do love a good dose of chocolate 🙂
