Another day, another waffle.
This is the last of the buckwheat waffles though, so you’ll have to wait and see what breakfast rut I go back to now…are you so excited!? 😛 It’s too cold for smoothies, so it will likely be granola. Or maybe I should get some Nourish bread back in my life. Something sweet for sure.
Since I ran out of candied walnuts, my vegan Winter salad was out. So I made the next best thing…a Thai style salad with leftover grilled salmon.
Also in the mix: dino kale (out of curly, sad face), TJs peanut dressing (kinda addicted), avo, salty blanched almonds, and salmon.
Plus a few carrots that I didn’t finish off while assembling the salad. I eat at least 20 carrots before my salads and usually the same amount after. I just love carrots.
We had no afternoon plans, but Kyle’s mom was coming for dinner so we squeezed in a trip to the library to swap out our old with new. P is really into chapter books lately. I read anywhere from 1-4 chapters to him a day depending on how long they are. So now I’m learning about that section of the library! I much prefer reading these books to him than children’s books to be honest. Even the cheesiest stories are still interesting enough. We got some Magic School Bus books to nurture his love for science.
Dinner was Kyle’s request – a niçoise kind of salad. I made the Spanish style dressing from GP’s cookbook “It’s All Good” to accompany it. I should have doubled it. I know better than that! I love dressing way more than the average person.
I steamed the green beans and the potatoes in the IP to save time.
Tuna in olive oil, green beans in dressing, hard boiled eggs, and potatoes…
With butter lettuce tossed in the rest of the dressing on the side.
Kyle was at a Spanish lesson while we ate, but we saved him some for later.
Beverly and I put capers on ours because we like that salty goodness. 🙂
We watched the Olympics for the rest of the evening, and it was finally something interesting! The Russian female ice skating was the best thing I’d seen in a while, followed by the women’s ice hockey Gold medal game. What an ending! I know there was probably more stuff on throughout the day, but why didn’t they show more speed skating during prime time?? I feel like that is the most exciting and exhilarating sport of the Winter games, but I saw hardly any.
On to Friday!
Ok I don’t have much to show for my Friday because I went to stroller strides in the am and then went to a fundraiser for Pattycakes’ school for dinner.
I tried to make the most of the ingredients on hand and make a different version of the Winter salad, but it wasn’t as good AT ALL.
I made a new batch of dressing which I massaged on to dino kale, but the lettuce was on it’s very last legs. I think dino kale needs a heartier vinaigrette than champagne…balsamic perhaps. Or maybe it was just this combo of things with the dressing that didn’t work. Either way, it was off somehow.
I added crushed pecans, avo, goat cheese, and dried cranberries and called it a day, but spent the rest of the afternoon getting a head start on my food prep for the weekend.
We had no PM plans and the kids were pretty content to build forts and play with each other or in the yard for the rest of the time until dinner, so I took advantage!
The oven was already on for the birthday cake I was baking for my five year old’s party (this one with his friends) so why not?
This was my first sheet cake! I was so nervous that it would overflow, but it went right up to the lip of the pan but not over. Phew!
I saved the frosting job for Saturday and got to work on candied walnuts and roasted butternut squash.

I popped open a bottle of Euphoria while working and it exploded everywhere. Again. So annoying. Despite it being my favorite flavor, I think I’m going to have to stop buying it. It’s really frustrating to attempt to manage cayenne fizzing all over the place! I want the spicy notes dispersed throughout the drink, not exploding into my sink before the effervescence calms down enough to drink the rest of the (now spice-less) bottle. Now that I’ve whined about it, I’m going to go write to GT’s and let them know.
I made the rest of the fam dinner before I hit the road at 6:30.
Why over complicate things? Noodles, chickpeas, peas, and pesto. Done and done.
I had such a fun night with my friends! I won two ice cream cones, too, so it looks like Kyle and V will be having a date for some scoops soon. 🙂
