Can you believe this weather? Haiti, Chile, Hawaii…makes the East Coast snow seem insignificant.

So I stomped my way through a good foot of snow to get to the hospital today. Brrr. I toted my usual eats with me too, including a big salad, a squash side dish, and apples and bars aplenty.
The big boy on the left contained spinach, steamed zucchini, carrots, brocc, chopped celery, chickpeas, and dried cranz. Holy ingredients.
The smaller side tupperware had delicata squash (I finally found it again! yes!!) with raisins.
Do you like celery? I used to love it, and then suddenly I was just completely over it. How weird is that? The only reason this salad had celery was because I happened to have two leftover spears from my bag of plane snacks. I guess my main issue with celery is the fact that it is sold in such huge amounts. Yes, I know you can buy the pre-cut sticks, but those are like 400% the price and this hippie’s on a budget. Sometimes you just want a spear or two, but it seems stupid to buy an entire stalk with 50 servings worth, right? I may be more apt to buy them and use them if I didn’t think that 90% of it would go to waste.
Bars, bars, bars. Apples and apples.
Although I used to poo-poo the feminine focused snacks, I am getting into Luna bars more and more lately, and this Iced Oatmeal Raisin flavor was pretty good. Oddly enough, the thing I love best about them is their less substantial nature. Because they don’t hold me over very long, they are good when I don’t know if I will be able to go for a lunch break in a few minutes or an hour. If I eat one, and then my patients are stable and I can slip away for a bit, I can still have my lunch without it being too much for my stomach.
This baby, on the other hand, is at the complete opposite end of the spectrum. I can’t emphasize it enough, Boomi bars are so good and they literally put my appetite on hold for hours. The Perfect Pumpkin flavor was awesome. The most dominant flavor was from the pepitas (my latest obsesh), and it married perfectly with the dates, raisins, crisp rice, apricots, and cranberries. I wish I worked for this company because I think I could live off these bars. Gah. They are just too good!!
I loved my lunch so much that I made the same thing for dinner. Delicata squash, raisins, and pepitas…oh, and actually sprinkled a bit of cinnamon on top after and it was sublime.
In an effort to get a nice winter tan – au natural – I had a pound and a half of sweet potatoes with dried cranz. I’m all about the faux glow.
And for an added sweet touch, I polished off the night’s eats with a HUUUGE strawberry smoothie. This one was packed with strawbeezies, xanthan gum, ice, silk soy milk, water, and a few drops of NuNaturals stevia (the liquid kind).
I also had a bunch (as in wayyyy too many) carob covered raisins. I only photographed this one because it was so small and cute. I find it funny when raisins escape the carob, or when carob coats a non-raisin (like the mini stem in this case).
Guess who is working again tomorrow? Yo.
I thought I was the only one who thought that about celery!
I love celery myself. Ants in a log, anyone? 😉
Buuut I can see myself getting tired of too much of it.

A little tip for celery: if you store it in a large jar/glass with a little bit of water at the bottom, it keeps way longer. It’s a trick my mom learned when she was a home ec major 🙂

I know what you mean about celery. I don’t even care for it, except random times when I want to add a little more crunch to my salad. It’s insane how much comes in a stalk!
And I go through phases with Luna bars, overall, I feel like they’re a pretty good snack.
Serena beat me to it, but I was going to say you should give the ants-on-a-log treatment to your celery. I don’t really love it plain, but cooking + ants on a log (I’m obsessed) means that I go through a big bunch by myself every week! 🙂 -Eve
I feel the same way about celery – I can never finish an entire bag myself so I never buy it. I like the idea of combing squash/raisins and sweet tater/cranberries, yum.

oh worrrrd iced oatmeal raisin is my fav flav! it reminds me of a cookie and i think that’s why i like it the best. i wiiish they stocked those bad boys at tjs but i’ve only seen them at whole foods so sadly i can only get them when i trek all the way there. poo.
dude you should seeee upstate! they had like almost 5 feet of snow. it makes the city look like we had a salt shaker’s worth
It is so funny that you posted about celery, because I have a new found love for it right now, lol! I have always loved it, but all the sudden I seem to be obsessed with it for some reason. I love it raw, in salads, with hummus (it is a GREAT vehicle for any dip, BTW), or just by itself, and I am digging it in soups especially right now…yum. Gotta stay warm in the snow storms with sou up, right?!?

Love celery. In my world, a package only really has about 3 servings. Mmm. It’s such a good vehicle for peanut butter and hummus, too. 🙂

Since you asked…I LOATHE celery!!! Well, raw celery sticks. If it’s in a salad and chopped, I’ll eat it. If it’s in a soup and cooked, I’ll eat it. The strings from raw celery get stuck in my teeth and I hate things getting stuck in my teeth /rant.
Cinnamon makes everything better, it’s a scientific law! I learned about it!
iced oatmeal raisin is my all time favorite luna flava – i find the chocolate ones to be too artificial tasting, or something.
the snow missed DC this time around, but i sort of miss having it be beautiful and sparkly outside all the time.

thanks for the tip. our fridge is FAR too small to store stuff though, but i will definitely remember that for future use…when i move to another apartment (house?) i hope to have a full sized fridge, but for now, its too small to keep anything for a long amount of time. its a use it or lose it system we have now. sad.
if only we could all split a big thing of celery!
its something i have been working on A LOT. seriously, its been a ton of work (i started working on it over a month ago) and so far im pretty happy with it. still have many more things to do though. i dont want a single item on there that im not 100% in love with myself, ya know?
