Most of the week

Before I got around to making my next loaf of persimmon bread, we had to get through this baked oatmeal. It didn’t take long though.

And by Wednesday everyone was fighting over this again.

My brekkies have been light, as I mentioned before, mainly liquids. And thanks to my overflowing CSA box that I got Monday I was able to make enough juice for at least three days.

Before dipping into my new box, I used up ALL the rest of the produce remaining in the fridge, including all the leaves and stems from the beets, carrots and turnips.

Then I spent the rest of the night washing, chopping, and prepping all the new veggies. WHICH WAS A LOT.

There are some repeat items, like Chinese cabbage, kohlrabi and bok choy, as well as some new things, like daikon, rutabaga, and leeks. Time to start brainstorming!

This looks like brown sludge but tasted awesome. Don’t judge a juice by it’s color.

Moving on to lunches.

Here are some of this week’s midday meals.

I sliced my hand open when I was cutting the radishes for the Thai salad above. I was being lazy and rather than using a cutting board, I tried to cut them in my HAND but of course that was a terrible idea and I am still wearing a bandage as a result. STOOP.

This was maybe the laziest Caesar salad I’ve ever made. It just had tessemae’s dressing and salty almonds. Whatever, it did the trick.

I had this same thing twice because it was SO good.

I pulled the last of the seedy bread from the freezer and smeared it all up with organic lactose free cream cheese and smoked salmon.

I had this guy twice also, because it was gooooooood.

I was all out of Nugget’s Thai dressing, but I had half a bottle of miso dressing left so I used that. It’s kinda meh, but if you add enough other ingreds you can turn it into something wonderful. Avocado helps with that. As do peanuts.

The rest of the salad was leaf lettuce and cilantro (both picked days before a few miles from my house and then packed into my CSA box by the lovely UC Davis ag students). Then it had leftover roasted butternut squash from a meal that I’ll share soon.

I’ll share some dinners in separate posts…but first a sweet little collage.

Well guys. I thought I took a few days off of dessert, but it looks like it was only one day. I guess it just FELT like a few days. I heart chocolate.

The kids planned this, by the way. Kyle had his bruin gear on too and people were asking us if there was some game or event all day. Nope! Just a preschooler and kindergartener calling the shots.
