Since I returned to eating eggs…a while ago…I no longer consider myself vegan. I’m basically a dairy free vegetarian. But that doesn’t mean I don’t like vegan food. I love it actually. I eat it often. And seeing as October was vegan mofo, I decided to recap some of my daily vegan eats.
October 1: Spaghetti Squash with Marinara & Tofurky
October 2: Quinoa & Seitan with Red Almond Sauce
October 3: Mexican Layered Casserole
October 4: Blue Plate’s vegan white bean soup and gardenburger salad
October 5: Pumpkin Cheesecake Pie
October 6: Native Foods’ sesame macro bowl with kale, brown rice, & tempeh
October 7: Mexi-salad with daiya, beans, tomato, avo & hummus on greens
October 8: Brown rice, broccoli, mushrooms & seitan with soy sauce
October 9: Veggie Grill’s bean me up chili and chop-chop chef salad
October 10: These leftovers with avocado
October 11: Black bean, kale & butternut squash soup
October 12: Sweet potato with sunbutter
October 13: Whole Foods’ vegan curry chik’n (gardein) salad with peas
October 14: Amy’s spinach and tofu burrito
October 15: BBQ veggie burgers & corn on the cob
October 16: Spaghetti squash with guacamole and salsa
October 17: Quinoa with tofurky sausage & marinara
October 18: Tropical Fruit Powerballs
October 19: Rice noodles with TJ’s vegan meatballs, marinara sauce, & nooch
October 20: Mendocino Farms vegan club
October 21: Acorn squash with cheesy cashew quinoa stuffing
October 22: PB&J on home-made wheat bread
October 23: Mohawk Bend birthday dinner!
October 24: Apple cinnamon peanut butter roll
October 25: Salad with veggies, hummus, 365 brand “meatballs” & avocado
October 26: Lentil loaf
October 27: Butternut squash soup with tempeh and peas
October 28: Pancakes with maple syrup and strawberries
October 29: Hippie bowl plate of quinoa, seitan, & carrots with Bragg’s aminos
October 30: Veggie Grill’s blackened “chik’n” urban plate with quinoa pilaf & steamin’ kale salad

This was just a small sampling of my plant based meals – some simple, some complex, some home-made, and some from dining out. Happy Vegan MoFo!
I’m vegan and eat hippie bowls every day, but good lord for the love of avocados, I would give up Earth Balance for a week for some of that homemade wheat bread on the 22nd. Then again, I wouldn’t be able to put the EB on the bread if that happened, so it would be sunbutter and banana sandwiches with toasted bread and the banana lightly grilled.
I’m late to the game, but lightly grilling the banana in a pan on the stove before adding it to the sunbutter sandwich is a game-changer. Game. Changer.
grilled bananas sound soooo good right now. yum.
How good is Veggie Grill’s chop chop chef salad? I got it last time I was there and just loooveed on that dressing. Ha!
Also, Mendocino Farms is my new favorite sandwich spot. The Vegan Bhan Mi is probably the best thing I’ve ever ate (twice now) because it is soo spicy and just so good.
This is such a good example of how easy it is to have a vegan meal/day without even realizing it. Question about your lentil loaf – I’m allergic to walnuts, what do you think would be a good replacement nut?
a blend of cashews and pecans could be good, but ive never tried it.
