I’m really obsessed with millet bread right now, which is a shame since it costs $6 a loaf.
The best way to enjoy it is with avocado smashed on top.
You really don’t need anything else, but if you’re feeling extra sassy, you can jazz it up with a squeeze of lime juice, dash of salt and paprika.
As far as I’m concerned mille-cado is the next PB&J. It’s a heavenly snack.
For the people following the low FODMAPS plan, avocado does have trace amounts (it’s in the polyols category with stone fruits), but sources differ on it’s tolerability, especially in low quantities. My latest resources say moderate amounts are acceptable during the elimination phase. And since I’ve never had any issues with the green goddess, I’m cool with following that advice. I haven’t had more than 1/2 an avocado per meal, though.
The other day, I brought this posse of eats with me to work:
Lemme do a play-by-play.
Breakfast was a familiar mix of oats with almond butter & cinnamon. I added in half a banana, too. The other half I ate on the way to work.
Lunch was different, but only subtly. I still had a big tupperware of greens, as per usual. But instead of using hummus as a topping, I used “cheesy” cashew sauce (the same sauce I used here).
Spinach and quinoa are kitchen staples, and I still have tons of french green beans from our last Costco run, so that’s pretty much how that came to be. The serving of green beans was on the moderate side, since they are sometimes included in the galactans group. My latest sources say that both fresh peas and green beans are ok though, as long as the portion is small.
I was rather generous with the sauce application, though.
Mmmm…creamy.
As for the day’s snacks, I had a dried fruit/nut mix, a few Ghirardelli’s dark chocolate squares, carrots, and a bag of terra chips.
I got a package in the mail the other day from a company called Lollihop. They put together a box of goodies full of yummy, healthy, quality snacks – including gluten free and vegan items – which you can subscribe to receive. I was happy to see many of my favorite companies represented on their site (Larabar, Clif bar, KIND bar, ProBar, kaia foods), plus some newbies I’d never heard of (somersault snack co.). And then there were a few I’ve been wanting to try for a while (two moms in the raw, glutino, Macro bar). Yeah!
Terra chips (original) made their way into my lunch box because they met all the fodmaps elimination phase requirements – they’re vegan, gluten free, and made from very pure ingredients. In fact, they are simply root vegetables with oil and sea salt.
The sweet potatoes were the best. They were thick, but somehow melted in your mouth as you bit into them. I don’t know how they did it, but I swear, I could have eaten a million of them. The parsnip and yuca chips were also good, but the taro ones were a bit tough. I never knew Terra chips had so many other kinds, but now I think I’d like to try a bunch of the other varieties.

Millet toast with avocado is kinda the best of both worlds.
I’m definitely more of a sweet person! I hardly ever crave savory breakfasts. Lunch and dinners are generally more savory, but I noticed nearly all my snacks are sweet. I need to check Lollihop out!
I prefer sweet snacks – dried or fresh fruit, but nuts or hummus with carrots also isn´t bad 🙂 I need to try that avocado + millet toast combination!
This is going to sound nuts (haha), but I’ve only recently started eating peanut and almond butter. I have been enjoying a jar of almond butter with flax seed in it, and I love spreading some on sliced apple. I definitely prefer sweet snacks over salty ones, but I don’t like anything too sweet. lately, i’m diggin’ kashi’s sea salt pita chips! i don’t know why, because usually i’m the girl with the insatiable sweet tooth, but salties have been my craving lately!

I’ve been going through a kale chip addiction lately, but my fave kind (Brads) are only at Erewhon and it’s a schlep to get there…so it’s keeping me in check (a little…). I think I need to try that millet bread – I miss avocado toast!
I go back and forth between sweet and salty – depends on my mood and what i’ve had that day. Right now it is salty. I just read about lollihop last night on Meals and Moves and immediately wanted to order it. I think I will.
That millet avocado toast looks great. I recently bought sprouted wheatberry bread and have been in love with that. I’ve never eat so much toast. I had 2 pieces at dinner the other night.
I’m drooling looking at the avocado pics. I had some the other day that was sooo absolutely buttery. My go to snacks are dried fruit strips and Mama Pea light dough balls.
Ok so I’m trying to do this elimination thing and my belly was super unhappy (aka bloated) today. Was it a)wasabi, b)pickled ginger or c) too much peanut butter?
Any ideas? I don’t think the brown rice veggie sushi itself would’ve hurt but maybe the condiments?
Oh my gosh, that all looks so good. That avocado with millet bread in particular…one of my favourite combinations, avocado on toast <3 yummy! I am definitely a sweet person, not salty at all – I love fresh fruit, raw almonds and raw almond butter (because they are naturally sweet and remind me of marzipan!) and dark chocolate. Those are my favourite snacks. Oatmeal or cereal with banana, vanilla vegan protein powder and coconut milk is another favourite. 🙂 xyx
Avocado on bread is sooo good. I like to have a bagel with avocado and nutritional yeast 🙂
omg i second you on the avocado snack – sooo good on toast, w/ chips, with a spoon……! The ONLY thing I hate about living in NYC is the lack of ripe avocados when I want them! 🙂 sorry i missed you in nyc 🙁 bad timing, hope you had an amazing time though!! xxxxxx
I am contemplating joining the lollihop thing! It seems pretty comparable in price to the money I spend on snacky foods anyways and it would be fun to try some new things that I can’t find around here! 🙂
My favorite snack is hands down trail mix that has cashews, almonds, dark chocolate chips, peanuts and raisins. Yum!
Ut-oh…. Are you saying you are new to terra chips??! Oh, they will blow. your. mind. Not hard to hoover an entire bag of the ridge cut sweet potato chips…. Two moms in the raw are great! Especially the bluberry one with a shmear of nut butter or crumbled into oatmeal. Surprisingly sold at a number of starbucks! Im a salty snacker in the afternoon and sweet snacker post dinner (unless i go to stogo for dinner!:)
Why do the good breads have to cost so much $$$? As for snacks, I’m currently loving on grapes. I could probably eat an entire lb. in one sitting!
Pop chips and cholula hot sauce! Obviously, only once in awhile cause its not very healthy, but so delicious!
i miss having avocado on toast. I used to eat that for breakfast with some black beans and hot sauce on top. It was divineee!!

right now I’m into sweet snacks, like granola bars, balls, or trail mix.
I’m definitely more of a sweet snacker…but lately I’ve been a sucker for the sweet/salty combo: pretzels and jam, dried fruit + nuts, cheese and apples…yum!
I love Terra chips! I don’t buy them often because 1. they’re certainly not cheap and 2. I can demolish a bag of them in a weekend… Haha!
