I didn’t know what I was doing for dinner until later in the afternoon so I had to get creative in thawing this pesto. Luckily I had just finished brewing a batch of kombucha so I submerged the jar in the big pot I had just made the tea in (after transferring it to the bottle with the scoby).
Worked like a charm and I had pesto ready for dinner by the time I had cooked the shrimp.
I added some to the shrimp and some to our bowls of arugula so that there would be no shortage of nutty basil flavor in the dish.
After it had simmered for a bit at the water evaporated, I added the gnocchi and a bit more water.
I kept adding more water and letting it reduce, over and over until the gnocchi was cooked.
This was the frozen cauli gnocchi from TJs (which I still have PLENTY of in the freezer from that time I hoarded 10 bags after they went out of stock). I should probably keep an eye on my supply because I don’t go to TJs as much these days but I will 100% be returning for this gnocchi if and when we run out. That and their tahini are worth the trip. I still haven’t been back since my food poisoning though…not sure I will ever be able to face those salads again. 🙁 Talk about breaking a habit the hard way!
I added parmesan to Kyle’s before tossing it all together.
Arugula, gnocchi, shrimp, pesto, boom.
The only difference between his and ours was the cheese.
The bulk arugula isn’t as spicy as the bagged kind, so the kids don’t mind it. I prefer the big bold flavor though, so maybe I’ll see if I can find an arugula source at farmer’s market so I don’t go back to the plastic bagged ones. I feel like the kind I buy in bulk at Nugget or the Co-op is sad and already wilted even if I buy it and use it within a couple of days. Do the bags keep it fresh? Or am I buying a different (milder) kind of arugula? Hmmm…I will have to do some research.

It’s nice and warm and comforting, like a Fall or Winter pasta dish, but is still slightly reminiscent of Summer thanks to the basil pesto.
Remember back when I thought gnocchi had dairy in it?? Man did that ever change my life.
Hi Elise, according to the lady who runs a local famer’s shop sadly the plastics bags keep the salad leaves and small greens fresh for longer. She is all for reducing plastic and doesnt use it for any other products but finds it hard to keep the greens fresh without the plastic bags. They wilt too quickly -> food waste and lost profit:(. Hopefully a solution is on its way and someone will make an alternative:)

Farmers market arugula is usually crazy spicy! I alwyfigured that the more fresh it is the more spicy it is but there must also be different varieties. I haven’t had good luck sautéing it, something goes a little bitter and it definitely looses that spicy flavor.
