Mid week prep

I was away from my kitchen this weekend so I had no time to prep.  So now I’m making it happen mid week…squeezing stuff in here and there between naps and after bedtimes and whatnot.

I hadn’t added granola yet to their bowls, and then by the time I got to that and the almond milk the blueberries were gone!  Sneaky little berry eaters.

I made this granola, per usual.  They’d been asking for it after a couple of weeks of pancakes and oatmeal.

Actually it wasn’t oatmeal that I made last week, but rather a big pot of quinoa and brown rice porridge.

I used this organic hot cereal mix from Trader Joe’s as a base and cooked it with coconut milk and water and added flax meal and maple syrup.  Each day I’d jazz it up differently, with sunflower seeds or pepitas, raisins or blueberries, shredded coconut or hemp seeds.  I thought it would be the same to them as oatmeal, but P wasn’t that into it for some reason.  V liked it and asked for it again and again, but P did little more than tolerate it (which is rare for him because he pretty much likes everything).  Anyway, it’s all gone now, but I’m not sure if I’ll buy it again.  We’ll see…

 Other prep work included:

  • roasting Brussels sprouts (I am unwilling to accept that this is not a Spring/Summer activity)
  • making candied walnuts
  • chopping bell peppers and watermelon
  • pressing tofu
  • roasting potatoes
  • baking banana bread

Watermelon means summer is AROUND THE CORNER!

I made this cinnamon swirl banana bread for Kyle – although it was dairy free in case the rest of us wanted some.  He finished it off on his own though. 😉

I didn’t write down this recipe but I have plenty in the archives if you’re feeling inspired.

    I’m with P on that hot cereal, too smooth/smooshy compared to oatmeal; kind of like how some people love cream of wheat (I don’t) because of the smoother texture.
    Very jealous of your watermelon! I keep buying them and have had a ton of not so good ones- aka lots of watermelon juice over here lately (i add some cucumber and lime and cilantro if it’s around).

    This one was kinda watery, but the kids didn’t seem to mind. I may try to make a slushy type of drink with it. Have you tried making watermelon flavored kombucha yet?

    Haven’t tried making my own watermelon kombucha just yet, somehow I wasn’t a big fan of the bottle GTS one- maybe the carbonation plus watermelon flavor threw me off? I’ll give it a go and save some waterlon juice since i have to do bottling soon- now that its summer my brew is fermenting a lot faster! Like I actually had some bottles overflowing on me because they were left too long on the counter- and that was just five days (in the winter more like 7-8 days).
