From Davis, it’s not too long of a car ride to Lake Tahoe! And since we left straight from swim lessons (again!), we had a sleepy babe for 80% of the ride.
Once we got to the cabin, it was time to relax. 🙂
Ok, first unpack, then relax.
Food much? You’d think we were packing to feed an army for a month. But it was really just Thursday through Sunday (celebrating an early Christmas with Kyle’s side of the family).
Guess what’s in those plastic boxes!?!
SIX (!!) different kinds of cookies. And that’s not even including the ones left in the car (because they had peanuts).
Putting away all the food got my appetite going, so I made this plate for lunch (and shared some with P).
The first dinner was pasta night.
I brought this cashew cheese sauce and GF noodles.
There was also pesto (with and without parm) and meat marinara on wheat noodles.
Paired with a simple salad and vino, it was time to kick my feet up and let the stress go.

The next day I woke up and did Jillian Michaels’ Shred with Kyle’s sister. We were both unhappy about it at first, but very glad we sucked it up once it was over.
In addition to the two quick breads I made, there were cinnamon rolls (with and without nuts), eggs, potatoes, banana bread, and who knows what else.
I was late on the breakfast scene because I was nursing P, but finished off the last of the eggs with avo and enjoyed a few slices of gluten free banana gingerbread (recipe coming!).
Eventually we made our way outside for a walk in the snow.
And that’s about as active as it got for the day!
Lunch time!
Leftover GF pasta with cashew cheese sauce, carrots, tomatoes, and tea. Plain (GF) pasta and avo for the little one.
P took a long long nap in the afternoon, which allowed Kyle and I to have some time to ourselves. It was awesome. We played pool and hung out without a worry in the world. I snacked on mixed nuts (not peanuts) and carrots and cookies.
And then our party grew…
In the late afternoon the rest of the family arrived, including the little girlies.
Honestly, all the photos with P and his cousins are total blurs. How do they have so much energy all day long!?!
Seeing them all hang out and play together made my heart melt. I could tell P was thriving off the interaction and the way the girls were fawning over him was too cute for words. They just couldn’t get enough of each other!

Dinnertime!
For the second night, we made roasted veggies, baked potatoes, and Field Roast (there were different kinds of meat for the non-vegetarians).
The baked potato was kinda boring without any toppings, but the roasted veggies made up for it. I will never tire of squash.
By the way, the cabin we rented was kinda insane (in a good way). No shortage of moose paraphernalia though.
Presents!
The kiddos opened theirs before dinner, so after dinner was the adults’ turns.
We had themed gifts that required guessing (it’s hard to describe) and it provided plenty of entertainment! If you guessed right, you got a lottery ticket. But basically nobody guessed right, so we all just split the tickets. Oh, and in case you were wondering, we didn’t win the big bucks.

It’s actually a good thing I had lots of dessert this night because P woke up at 3 am and once he realized we were sharing a room he was not very inclined to go back to the pack n play. 🙁
We shared the bed with him for the second half of the night. I’m so nervous he’s getting too used to it because of how frequently we’ve been away from home lately. I swear, he’s only slept in his own crib a few times since mid November. The kid does well with routine so I don’t want to ruin it! What can you do, right?
Anyway, I couldn’t convince Kyle’s sister to do the Shred with me the next morning, but I did recruit two of the little girls to join me. We used cans from the pantry and at the end of it they asked if they could do it again. WTF?! Really??? Where do they get the energy?!?!
So my breakfast (above) was more banana gingerbread this time topped with blueberry goat cheese and coupled with a pair of fried eggs. Blueberry goat cheese, for the record, is amazing.

They went sledding outside too and were begging me to let P to go down in the sled with them.
For lunch I threw together total randomness, including leftover roasted veggies, blueberry goat cheese and eggs. Basically breakfast reworked. And if you’re thinking (sweet) blueberry goat cheese sounds weird with (savory) roasted veggies, let me assure you, it works.
The wheels on the bus go round and round…
It was taco night for dinner, which included vegetarian chili packed with zucchini and squash. My stomach was feeling super wonky (out of sorts from all the cookies and travel, no doubt), but by the time I put P down for the night I was starving and just made the best of things.
There weren’t any corn tortillas left for me, so rather than make a flour burrito, I made nachos. I used corn chips, the last of the cashew cheese sauce, avocado, tomatoes, and the veggies from the chili (I picked out the corn, zucch and squash and tried to avoid the beans).
Nachos for the win. Plus champagne – that always helps. 🙂

The next morning was basically a repeat. P woke up at 3 am and we brought him to bed to soothe and snuggle (thereby avoiding waking the whole house).
Once it got to be a reasonable hour, I did the Shred (this time with Kyle’s sister AND the little girls). It was like a full on workout class in the game room!
After breakfast (scrambled eggs, fried eggs, and banana gingerbread on a moose placemat), we all layered up and headed to Soda Springs for some snow play.

He wasn’t into the tubes at first, but then we found a slower ride for the really little babies (it just pulls them around in a circle). So cute!
By noon my little snow bunny was pooping out so we headed back to the cabin for some quiet time. I nursed him in the car before we went home so he could pass out in the carseat. And that’s exactly what happened. Unfortunately, his nap wasn’t very long so Kyle and I split time eating lunch and watching him.
Everyone else ate at the ski lodge, so we were on our own for lunch. Meaning leftover randomness. I made a classic Elise egg/avo salad which I scooped up with salt & pepper popchips and carrots.
My normally reserved kiddo really came out of his shell this weekend. Not that he’s shy or anything, but when there are a lot of people, he usually just observes the crowd and takes it all in. People always comment that he’s so chill, but around me and Kyle, he’s a crazy pants. Giggles and smiles aplenty.
Since we were around family for a few days they all got to see that side of his personality, too. So fun.
Dinner was equally random because it was our last night at the cabin and we had odds and ends to finish off.
I steamed broccoli and added it to the last of my cashew cheese pasta, along with the remaining goat cheese and baked potato. So weird.
Dessert was surprisingly NOT cookies (they were packed already). I made do. 🙂
Kyle and I soaked the last bit of vacation up with a late night hot tub session. And now it’s back to the real world here in Davis.

Gotta love Jillian 😉 I know you’re a Shred girl, but have you ever done her “Ripped in 30” DVD? I’m not a fan of level 1, but the other three levels totally kick your butt. It’s a nice change from Shred.

I must be coming out of my pregnancy food aversion because I could sort of scroll through your whole post.
Can I ask a really important, random question about the Shred? How much space does it require to do? Cuz we have a really small house and even though it’s not cramped, I imagine needing like a 10×10′ spot to move around. Yes? We are remodeling this year and will have space eventually, but I’m just curious.
if you can fit a yoga mat in a space then you’ve got enough room!

sorry neysha, none of the cookies were vegan as they all had eggs. they were non dairy – we used coconut oil in place of butter.
