I don’t know if other people do this, but I took a photo of the tag on one of the salads at the Nugget prepared foods section because I knew it was something I could make on my own (maybe even better?). Well, it took me a week or two, but I finally made it. And it was really good!
The original recipe had farro with arugula, peas, zucchini, and some kind of honey dressing. You can see the tag below.
No idea what country honey dressing is, but I figured a simple lemon vinaigrette would do.
I used 5 tbsp olive oil, 2 tbsp apple cider vinegar, I tbsp lemon juice, 1 tbsp honey, 1 tsp dijon mustard and salt and pepper.
I stirred that into 3 cups cooked quinoa, 1 cup peas, and 1/4 cup dried cranberries.
And then later I added roasted zucchini, toasted slivered almonds, and arugula.
The kids don’t like arugula, fyi. And Kyle doesn’t like zucchini. So I catered to those requests when serving.
Then I tossed everything so the lettuce got dressing-ified.
And added baked salmon on top to make it more of a filling meal.
