Hello hormones

Sometimes the perfect storm occurs and a rainy day overlaps with that time of the month (TMI? sorry male readers…) and all I want to do is bake.  Chocolate, specifically.

Recently Gabriela made a batch of double dark chocolate peanut butter cookies that I bookmarked for just this sort of occasion. 

I modified the recipe a bit, as noted below.

Double Chocolate PB Crunch Cookies (adapted from this recipe)

Ingredients:

  • 1 cup whole wheat flour
  • 1/4 cup sucanat vegan cane sugar
  • 1/4 tsp salt
  • 3 tbsp special dark chocolate cocoa powder
  • 1/2 cup roasted salty peanuts, chopped
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup + 2 tbsp agave nectar (I subbed 1/3 cup chocolate chips)
  • 1 tsp vanilla vanilla paste
  • 3 tbsp canola oil coconut oil
  • 1/3 cup 2 tbsp peanut butter
  • [I added 1/3 cup almond milk]

Instructions:

Preheat oven to 350 degrees.  In a large bowl, combine dry ingredients (flour, sugar, salt, cocoa powder, baking powder and baking soda).  After the dry ingreds are well mixed, add in the chopped nuts.

In a separate bowl, combine wet ingredients (melted coconut oil, melted chocolate chips, vanilla, and peanut butter).

Add the wet to the dry ingredients and stir until thoroughly mixed.  Then add in the almond milk.

Once dough is ready form small 2 inch balls and place on a baking sheet sprayed with nonstick spray (or lined with parchment paper).

[Try not to eat all the dough before it makes it into the oven…although it is fair game since there are no raw eggs]

Bake for 12 minutes, and allow to cool for a minute or two before removing to cooling racks.

Yowza these were fantastic.

They weren’t very sweet since I omitted the agave and replaced it with chocolate chips.  Also the crunch of the nuts was a nice change up from the usual cookie, and the salt added a whole other dimension (that salted chocolate fad is the real deal).

With these cookies and the vegan truffles in the house, I am one tub of ice cream away from being a full blown hormonal cliché.  Add in the fact that I have been living out of PJs for most of the weekend…and there’s a trail of crumbs between the kitchen and the couch…

It may be time for an intervention.

    oh, those cookies look good! I love a less-sweet cookie, especially when chocolate is involved.

    I seriously have no tolerance for bad weather anymore. it’s a good thing we don’t have to deal with it too often.

    I agree about salt and chocolate, and baking around that time of the month. Oddly, I also get really into cleaning then, too. Strange, but it keeps things organized!

    Just made these and thought I would let you know just how spectacular they were! I used even less sugar (I like my choccie bitter) and canola oil (may have to try coconut for the next batch) but otherwise your recipe was just perfect. Thank you!
