The zucchini from my mom’s garden is out of control!
There’s my forearm as a reference. Pretty ridiculous huh? I guess her garden’s raised beds are doing the trick…no more gophers snacking on the veggies before we can get to them.
Since her produce is multiplying like the Jolie-Pitt gang, my mom’s been encouraging me to help her put them to good use. Being the obedient daughter that I am, I got right to work. Fresh from the vine vegetables? You don’t have to ask me twice!
This meal is from last month (when I was still in Nor Cal) and even though I made it up on the fly, I think it was good enough to share with you all.
It is a semi-raw take on ravioli (hence the moderately clever post title), and revolves around adorable multi-colored tomato babies and very thinly sliced zucchini.
I added some store-bought beets too…
and then destroyed the raw theme altogether by adding in some plain greek yogurt (followed by salt, pepper, oregano, basil, and thyme).
Spooned it over the zucchini slices.
And then topped it with another zucchini slice.
Ta-Da!
Not that I have anything against pasta (lord knows I’m a carb worshipper), but this was a nice alternative to traditional ravioli and the greek yogurt subbed nicely for any kind of cheese with it’s mellow but slightly tangy flavor.

interesting concept! i love zucchini, beets, greek yogurt & tomato! maybe i’ll have to try this?
