Prepare yourself. This post is far from aspirational in terms of cooking. Like the rest of you, I’m just doing my best with what we have while staying away from stores. Which means my weekly/monthly delivery orders are crucial. Anyway.
Nothing fancy about this meal, but it hit the spot, so that’s all that matters!
I swear, I switch meal ideas 4-5 times over the course of the day, trying to maximize what we have and stretch little bits of various ingredients to go a long way.
When I last made these frozen falafel I had nearly this same amount as leftovers for lunch the next day (all for me). But this time we shared them because life is different now.
I served them with the same naan as last time (which was still soft and fluffy after being stored in the fridge), red pepper hummus, and a lentil and spinach salad.
The lentil and spinach salad was the thing that kept changing in my head. I wasn’t sure if I wanted to do a grain salad…or what kind of dressing…or if I wanted cheese in it like my fave lentil salad…or, or orrrrr…make up your mind woman!!
So the dressing I ended up making was a tahini based one, which I got from the ATK Just Add Sauce cookbook, but tweaked based on what we had (and the amount we needed).
- 1/4 cup extra virgin olive oil
- 3 tbsp lemon juice
- 2 tbsp tahini
- 1 tsp garlic infused olive oil
- 1/2 tsp salt
- pinch of ground pepper
I mixed that all up, added it to ~2 cups cooked lentils and ~2 cups spinach and let it soften up until dinner. It was perfect with the naan and falafel.
Booch o’clock!
I don’t remember loving this one (which is why it’s been in the fridge since fall) but apparently I’m so desperate for kombucha now, anything and everything tastes good. HA. Ok, but seriously, this hit the spot. It’s got a kind of wine vibe, but not really. And yet, it’s flavor is barely reminiscent of kombucha. So it’s really in it’s own category.
Moving on!
In case you needed the reminder: Sometimes good enough is good enough.
And since this was the day before the arrival of our CSA box I was working with very little.
But very little still gets the job done.
