Fudgy Double Decker Chocolate Brownies

Fudgy Double Decker Chocolate Brownies [vegan]

Ingredients:

Layer 1

  • 3/4 cup all purpose flour
  • 3/4 cup cocoa powder
  • 1/4 cup vegan butter
  • 1/2 cup turbinado sugar
  • 3 tbsp chia seeds
  • 1 1/4 cup chocolate soy milk
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1 tsp baking powder

Layer 2

  • 1/4 cup peanut flour
  • 1/2 cup chocolate soy milk
  • 2 tbsp chia seeds
  • 1 tsp vanilla
  • 1 tsp baking powder

Directions:

Pre-heat oven to 350.

First make layer one.

In one bowl combine flour, cocoa, salt, baking powder and mix.

In a separate bowl combine melted butter, vegan sugar, vanilla, chia seeds, and chocolate milk.  Let this sit for a few minutes so chia seeds can gel and liquid portion can thicken.

Pour wet batter into dry ingredients and stir until well mixed.

Spread into greased 8 x 8 baking pan.

Next make layer two.

Using the same big mixing bowl combine peanut flour and baking powder.  Using the same smaller bowl combine chocolate soy milk, vanilla, and chia seeds.

After the wet ingredients have had time to gel, add them to the dry and mix well.

Pour on top of the first layer and spread out evenly.

Bake at 350 degrees for 30 minutes.

It will be a little poofy when it first comes out of the oven, but the center will sink a bit as it cools.

The sides will also pull away from the pan and it will solidify to make a nice fudgy brownie.

Wait until it has cooled before you cut into it.

This recipe is perfectly gooey and soft, while still maintaining a brownie like crust on the outside.

The chia seeds give it a unique crunch, but itโ€™s definitely packed with chocolate flavor.  Cocoa powder AND chocolate milk will have that effect.  :)  Thereโ€™s also a nice subtle peanut flavor going on too.

Notes:

This recipe is relatively low in fat with peanut flour as the source of nutty flavor and only 1/4 cup of vegan butter.  I used Earth Balance, but other substitutions could be made (ie coconut oil, peanut/almond butter).

If you are using chocolate almond milk in place of chocolate soy milk, you will probably need a bit more sugar to sweeten it, otherwise the sugar in the milk will be enough with the 1/2 cup of sugar. 

Flax eggs will work in the functional sense of the recipe, but they will likely change the entire flavor of the dessert.  Let me know if you try it.

    hmmmm…im not sure but i dont think its quite the same so it might not work out. i think it would definitely be more grainy with AF. if you try it lemme know.

    I made these the other day and they turned out great! The changes I made: I used coconut flour instead of peanut flour, and had to add more than 1/2 cup of milk (about 3/4 cup) to thin it out. I used unsweetened chocolate almond milk and the sweetness was just fine with the 1/2 cup of sugar. Yum ๐Ÿ™‚
