I’m planning to do a (photo heavy) post recapping Thanksgiving later but I needed to first get this out there.
Pie!! More specifically. Chocolate Pecan Pie!!
My mom is a dessert queen. She’s known for her amazing cheesecakes and pies. My dad wants her to sell them, they’re that good.
So it’s not abnormal for the Thanksgiving checklist to include four desserts. Occupying the top spots no less. Everyone loves a checklist right?

Chocolate Pecan Pie
[adapted from Bon Appétit]
Ingredients:
- 1 1/2 cups (6 oz) coarsely chopped pecans (+ more whole pecans for topping)
- 1 cup (1 6 oz package) semisweet chocolate chips
- 1 8 inch pie shell, partially baked
- 1/2 cup light corn syrup
- 1/2 cup sugar
- 2 extra large eggs
- 1/4 cup butter, melted and cooled (use Earth Balance for dairy free)
- [optional topping] whipped cream
Directions:
Pre-heat oven to 325 degrees F.
Sprinkle pecans and chocolate chips evenly into pie shell. Blend corn syrup, sugar, eggs in medium bowl. Mix in melted butter. Pour mixture slowly and evenly into pie shell. Arrange top layer of pecans in pretty pattern (see above).
Bake until firm, about 1 hour.
Serve slightly warm or at room temp, garnished with whipped cream if desired.
This was my portion on Thanksgiving day. OMG. Mouth. In. Love.
I think this is my new favorite dessert of my mom’s. She stopped baking it a while ago because none of her kids liked nuts. How foolish were we?? Totally missed out for way too long. Glad I’ve come to my senses.
She used this gluten free pie crust just to give it a shot and I don’t know what others felt, but I thought it was great. The employees at WF gave it the thumbs up so I was confident buying it and it turned out to be just as easy to work with as any other refrigerated pie crust. Just rolled out and shaped. Parts of it stuck to the pan a bit, but that sometimes happens with wheat crusts too.
It was a gloriously glutinous holiday. 🙂
oh my gosh, that is quite a dessert bar! I had apple and pumpkin pie this year – neither were gluten free but I just ate the filling out of the middle and left the crust. Better than eating none at all!
Such a great-looking pie! I’ve never made a Pecan pie before, but I love the way this variation looks and sounds.

FYI I noticed no difference in the crust at all. If I hadn’t known you guys went GF I wouldn’t have ever known. I want moreeeeee!
