Before we went to Hawaii I managed to avoid the grocery store in order to do a fridge clean-out. And I did a DANG good job if I do say so myself (even if it meant eating meals I wasn’t super in the mood for).

We had an al fresco meal with nuts, cheeses, bread, and fruit. It’s my new go-to on lazy days. The kids think it’s the fanciest and love that they can just help themselves to whatever. They still call it a “feast” like they did back when we first started doing these. We had so much cheese still left over from the zoom wine pairing event!

I would like to say I was getting us all in the Hawaiian mood before our trip, but it was completely accidental. I had lox in the freezer and threw the rest of the veggies in a bowl.

It was kinda similar to this meal (when I was also dreaming of Hawaii, but had yet to reveal that we were going there – mainly because I wasn’t fully sure it was happening until we were legit ON THE PLANE).

It had:
- mixed rice
- edamame
- cucumber
- kale and cabbage massaged in sesame oil
- avocado
- green onions
- lox
The lox was saltyyyyy heaven and we were all about it. But seriously, if you make this, don’t add tamari because the fish is a sodium bomb on it’s own. Thank goodness the avo and cucumber mellowed it all out.

Next up was a very packed pasta dish.

The kids chose the wheel noodles, which are a fun change up from penne or fusilli.
It had random veggies that we had in too small an amount to do much else with – broccoli, bell peppers – and WF organic chicken sausage.

Oh hi! Another rice bowl.
I try to avoid back to back dinners with the same grain, but as long as there is one other meal in between I feel that’s enough. What do you think?

I used the leftover pork from these Hula sliders, then made some slaw and added that and avo to brown rice for a nice balanced bowl.

Ta-da! Fridge emptied!

I feel the same way about changing up the grains, but then I laugh at myself because my Thai friend from Maui always told me her husband felt like something was missing if they ever had a meal without rice š
honestly, kyle would eat rice every day (and i doubt the kids notice), so i am probably doing it for nobody but me.
